Where should I pour the vinegar? And in the photo there is soda, but it is not in the recipe.

Vinegar in the dough, of course. And extinguish the soda in it. It contains soda, you just need to click “show all ingredients”.

KHALIDE! Thanks for the interesting recipe! I'll try to bake something like this someday. I have a question for you. As we all see, you gave a recipe for savory baked goods with meat. And in one of my books of national cuisine there is a recipe for sweet curd cookies, which are called Tatar cookies Echpochmak. The idea is that circles are cut out of the dough, sprinkled with sugar, folded in half, sprinkled with sugar again, folded again, the result is triangles, which are also sprinkled with sugar on top. Incredibly delicious! We love it, I make it very often. It turns out that the authors of that book got something wrong with the name of the cookie, or could it be: both sweet and savory pastries under the same name? Or does the name of the pastry come from its triangular shape? Thanks in advance for your answer!

In general, echpochmak is never sweet. This is a traditional version of pastry made from dough with lamb. Sweet echpochmak is the same as sweet dumplings.

All clear! This means that the authors of the book I told you about did not study the subtleties and features of the national cuisine well enough, but nevertheless began publishing. Yes, this is a serious mistake and embarrassment for them! Well, thank you for your quick response!

His appearance is not at all “Tatar”. In echpochmak, the dough is either unleavened or yeast. You need to leave a small hole in the middle so that in 5 minutes. until ready, pour in a couple of teaspoons of broth. And if the meat is fatty, then completely pinch it.

Khalide! I found out that “echpochmak” is translated from Tatar as “triangle”. But I asked you earlier: maybe the name of the baked goods comes from its triangular shape?
