This is the catfish I ended up with. I made cutlets from it according to this recipe. The meat of catfish is white, tender, and there are few bones. Nevertheless, I passed the fillet through a meat grinder twice, just in case. Along with the fish, I ground onions and bread soaked in milk. I had the bread for toast, I like it best in cutlets, probably because it is white and has a lot of gluten. The recipe says to add butter. I once made cutlets with butter, we really liked them, so this time I didn’t even doubt it, I put in a good piece) The only spices were a little white and pink pepper, ground in a mortar. I left the minced meat in the refrigerator for half an hour to stabilize, after which the cutlets formed perfectly and did not fall apart. I rolled the pieces in ground breadcrumbs, thanks to which the cutlets acquired a beautiful crispy crust. The cutlets turned out dense, cut well (the cut is excellent!), but at the same time they are incredibly tender. Catfish cutlets are very appetizing and tasty! If you are not following a diet, be sure to add butter to white fish cutlets) I recommend it!

nasstin, wow, what an amazing fish you have!!! Did you catch it yourself? Well, perhaps you’ll take a picture of your ear and make it happy? Very appetizing cutlets, and the fish was probably not bony at all, so the minced meat came out so quickly without any hassle! Or were there still bones, except for that big bone? Did you have to choose? For fish cutlets, I usually take fish fillet or fish that has few bones - I don’t like this whole procedure with choosing bones, it’s so creepy...Thank you very much for the recipe!!!<br />

Fish cutlets are a GOOD and even a very good idea, although I’m afraid of this catfish - after all, (if I’m not mistaken) this is a river fish and the aroma of algae scares me. In the meantime, I gratefully take it to K/K.... THANK YOU!!!

Nastya, amazing cutlets! Instead of butter, I add salted pork lard, and it turns out delicious too.
