The first step is to soak the slices of bread in milk. You can take a little more or a little less bread, depending on what taste and consistency of cutlets you prefer. I took 5 small slices.

We remove the fillet from the catfish. We don’t throw away the bones and the head - they will make a wonderful fish soup

Remove the skin from the fillet and cut into large pieces

Grind through a meat grinder along with bread and onions

The result was wonderful minced fish

All that remains is to add salt and butter. Here you can season with your favorite spices - for example, white pepper goes well with fish cakes

Now with wet hands we form cutlets

Roll them in breadcrumbs

Fry in a heated frying pan with the addition of a small amount of vegetable oil over low heat, covered, until golden brown.
