Stollen curd

An extraordinary melt-in-your-mouth dessert with a light lemon note! The taste is unusual, the structure is melting, there is a wonderful “cap” of powdered sugar. Excellent result. “Ripe” stollen is magnificent.

Wonderful cheesecake. Unlike classic stollen, cottage cheese is not greasy, moist and dense with spicy dried fruits (soaked overnight in cognac). A prerequisite: cold aging is necessary to reveal the full flavor. I bake several stollen in advance, 2 months before Christmas and store them in the freezer, a week before Christmas I transfer them to the refrigerator, on Christmas Eve I put them on the table in a place traditionally decorated with herbs and grains. My stollen turns out to be the color of a “Black Sea tan” due to being soaked in cognac dried fruits And the powdered sugar topping hints at snow. I recommend everyone who loves cottage cheese dough to try this recipe.

Thank you! I was so worried that the baked goods would disappear after so much time, but on the contrary, they became so bad that words can’t describe them, they’re just melting!

Why do you really need to wait 2-3 weeks? I have never tried such a dish. Someday I'll be able to cook it. Thanks for the step-by-step photos, it makes it clearer how it needs to be folded

Yes, these are German Christmas baked goods that are then left to “ripen” for several weeks, which makes them tastier. I have nothing to compare with, because... I cooked for the first time. But, I’m inspired to try similar dishes in the future.))

A very unusual recipe, all the ingredients in it are delicious and you need to have willpower not to eat it ahead of time. You probably need to make two cupcakes, and try the aged adit and the unseasoned one, and decide for yourself whether it’s worth the hassle of waiting.

Galla, that's for sure. It was necessary to bake two ovens. I thought about this too. But I quickly “forgot” about stollen, because... the intention to endure it was strong. But the taste is incomparable (since I know the taste of baking with cottage cheese), it’s something special.)))
