Squids stuffed with vegetables, cheese and champignons

STEP 1
For this recipe we will need the products that are described in the composition.
STEP 2
Take unpeeled squid, scald them with boiling water and quickly remove the skin. If you don’t like the smell of squid, then additionally sprinkle it with freshly squeezed lemon juice, which can remove the specific smell of this seafood. Next, lower the squids into boiling water for 1-2 minutes until they are just set in the mold. You can’t cook them longer, otherwise they will become rubbery. You can add bay leaf and peppercorns to the water. Remove the carcasses from the water.
STEP 3
Let's start preparing the filling for the squid. Cut the peeled onion and cabbage into thin strips.
STEP 4
Peel the carrots and grate them on a coarse grater.
STEP 5
Wash fresh champignons and cut into slices or small cubes.
STEP 6
Pour olive oil into the frying pan (you can replace it with refined vegetable oil if you don’t have olive oil) and let it warm up over medium heat. Add the onion and fry it while stirring for 3 minutes. It should become transparent. Add the carrots and simmer for another 5 minutes while stirring.
STEP 7
Next, add mushrooms and cabbage to the pan with onions and carrots.
STEP 8
Mix all the ingredients and fry until cooked over moderate heat, do not forget to stir. Add salt and ground black pepper to taste. The filling is ready, now you need to let it cool completely.
STEP 9
And now we come to the step that will tell you how to cook squid stuffed with cheese and mushrooms. At this stage, fill our squids with filling.
STEP 10
Place the stuffed carcasses in a baking dish, grease them with sour cream and sprinkle generously with grated cheese. Place in a preheated oven for 10 minutes.
STEP 11
Stuffed squids are ready! Serve them to the table, sprinkled with herbs.
