Snack eclairs with filling

STEP 1

Prepare the necessary ingredients for making eclairs. Eggs should be at room temperature and not small.
STEP 2

Cut the butter into pieces and place in a saucepan. Add water, milk, salt. Place on moderate heat.
STEP 3

Heat the mixture to a boil, stirring constantly until the butter completely melts.
STEP 4

Sift the flour first. As soon as the liquid mixture boils, immediately add all the flour, while actively stirring the mass.
STEP 5

The mass should be homogeneous and move away from the walls of the pan. Heat the dough over low heat while stirring for 1-2 minutes until the flour is well cooked. Remove the pan from the stove.
STEP 6

I immediately beat all the eggs and add them in portions to the dough. You can add one egg at a time.
STEP 7

Let the dough cool until slightly warm. Add about 1/4 of the egg mixture (or 1 egg).
STEP 8

Beat the egg into the dough. Add the next egg only after the previous one is completely combined with the dough. Add all the eggs this way.
STEP 9

The finished dough is viscous, smooth, homogeneous, slowly flowing from the spatula.
STEP 10

On a baking sheet greased with a thin layer of vegetable oil, place the eclairs at a distance of 2 cm from each other. All my eclairs did not fit on one sheet. There were 35 eclairs in total, I made them small.
STEP 11

Bake the eclairs in an oven preheated to 180 degrees for 30 minutes. It is better not to open the oven during baking so that the eclairs do not settle due to temperature changes. Cool the finished eclairs.
STEP 12

Prepare ingredients for fillings. I made 2 options.
STEP 13

For one filling, hard-boil an egg, cool in cold water, peel, and grate on a fine grater. Grind hard cheese in the same way. Wash the dill, dry it, chop it finely.
STEP 14

Combine the filling ingredients, add mayonnaise, mix.
STEP 15

For other fillings, first defrost the shrimp and boil them in boiling salted water. I have unpeeled king prawns, I cooked them for 7 minutes. Remove the prawns and let cool.
STEP 16

Garlic, peel, wash, pass through a press or grate.
STEP 17

Peel the shrimp, chop finely. You can grind the shrimp in a blender, then the filling will be paste-like.
STEP 18

Combine shrimp, curd cheese, garlic, mix. The mixture seemed a little thick to me, so I added a couple of tablespoons of cream.
STEP 19

Cut the eclairs on one side not completely (or cut completely lengthwise) and fill with filling. I filled a little more than half of the eclairs with this amount of filling. The appetizer is ready. Bon appetit!
