A wonderful cottage cheese casserole originally from Lviv. An original recipe for a dish that sunk into my soul at first sight. The most delicate consistency of the dough, sweet cocoa glaze, delicious inclusions in the form of cherries - a real culinary masterpiece that you can easily prepare yourself.

    To prepare the dough, it is good to take a blender or mixer. Mix sugar with cottage cheese and vanilla sugar.

    Beat in the eggs.

    Add mashed potatoes and softened butter, add turmeric. Beat everything well until fluffy, trying not to leave any lumps.

    Add lemon zest.

    Pour boiling water over the dried cherries and leave for 15 minutes. Drain the water, dry the cherries with a paper towel and add them to the total mass.

    Line the bottom of the baking dish with parchment and spread the curd mixture onto it in an even layer.

    Bake in a preheated oven for about 50 minutes at 180-190 degrees.

    While the sirnnik is baking, prepare the chocolate glaze. To do this, mix sugar, milk and cocoa in a saucepan or other iron container (it must be sifted through a fine strainer when adding). Cook the mixture to optimal thickness with constant stirring over low heat, at the end add butter and mix everything well. The glaze is ready. Pour it over the cooled sirnnik.

For breakfast I often make cottage cheese casserole. This time my choice fell on the sirnika recipe. I was attracted by the unusual name for me and the beautiful yellow color of the casserole itself. And, of course, chocolate icing! It’s immediately clear that children will appreciate such a breakfast-dessert) After reading the ingredients, I didn’t immediately understand why potatoes were listed here. But it turned out that you really need to add mashed potatoes to the dough! This is very unusual. I made mashed potatoes from two medium potatoes in advance. While it was cooling down, I began to put the ingredients into the blender one by one. First, I beat the cottage cheese with the eggs so that the mass settles and there is room for the rest. Then added sugar and beat again. Then spices, butter and finally puree. Baking powder and soda are not used here, so it’s immediately clear that the sirnnik will turn out quite flat. I didn’t have cherries, but I didn’t replace them with raisins, my daughter doesn’t like them. For baking, I used a rectangular cake pan, which I covered with parchment on all sides. I baked it for a little over an hour at 180°, waiting for the top to brown a little. The finished sirnnik is very tender; I waited until it cooled completely on the parchment (without a mold) and turned it over onto a board. Then cooled it in the refrigerator. At this time I made the glaze. After covering with glaze, I put it back in the refrigerator until the morning. The whole process takes a little time, but making sirnik is not at all difficult. So, my sirnnik turned out to be a beautiful yellow shade, the glaze froze well, and no sugar crust appeared. The consistency is similar to a homogeneous dense and delicate cream, but at the same time it is perfectly cut into pieces and holds its shape. The taste and aroma are intensely lemony. You can't feel the potatoes at all. I think it is needed here specifically for the creamy consistency. Sirnik is also very filling, one slice with a cup of tea is enough for a hearty meal) The impressions are only positive!

Simply a masterpiece cheesecake. I would replace the dried cherries with raisins. Still, raisins in combination with cottage cheese taste more familiar. But I really like turmeric in cheesecakes, I also add it.

A very tasty cheesecake. I really like baking with cottage cheese. You are right Ellisa, with dried cherries this cheesecake will be more delicate. Raisins are also good, but they get boring in baking, and my family doesn’t like raisins in baked goods. So your version of the Carpathian cheesecake comes in very handy. It’s both beautiful and must be very tasty. I’ll definitely try to make it for the next holiday.
