    Peel the onion and cut into cubes.

    Sterilize the jars in any convenient way. I put jars with a small amount of water in the microwave for 5-7 minutes. But you can also sterilize them in the oven at 100 degrees for about 30 minutes or hold them over steam. It is enough to boil the lids for 5 minutes. From this amount I got 2 liters of finished caviar and a little more for tasting))) . I used vinegar essence and added 1 teaspoon. For my taste, it turned out just right. I really love squash caviar, both cooking and eating. and in the slow cooker it turns out very tasty. and there are no particular difficulties in cooking. fresh produce spices to suit your taste, I mostly use only salt, black pepper for flavor, and if you want it spicier then just a little hot pepper. but for me the main thing is the consistency of the caviar, well, I don’t like it when there are large pieces of anything in there. I always try to grind them finely, then for me it tastes good and looks beautiful. Try it and you will like it.

I make squash caviar in a slow cooker much easier. I cut all the ingredients, put them in a bowl and turn on the “Pilaf” mode. After the signal, the caviar is ready. You can put everything through a blender, or you don’t have to. If I preserve it for the winter, I put it in half-liter jars and add a teaspoon of vinegar to each.
