STEP 1

How to bake shortbread plum pie? First, prepare all the ingredients needed for the dough. Take the highest grade wheat flour. Remove the butter from the refrigerator in advance so that it has time to soften. Chicken eggs should also be at room temperature. Adjust the amount of sugar in the filling according to your taste. If the fruit you use is not very ripe and sour, you will need to use more sugar.
STEP 2

In a suitable sized container, combine soft butter, sugar and salt (on the tip of a knife). Beat the mixture with a mixer (at low speeds) to a creamy state. Sugar crystals should completely dissolve. Instead of sugar, you can take a sweetener that is not afraid of heat treatment (read the instructions for how much and how to add).
STEP 3

Add eggs one at a time. At the same time, do not stop the whipping process, stirring the mass each time until smooth.
STEP 4

The consistency of the mixture should be viscous and homogeneous.
STEP 5

Sift the flour to saturate it with oxygen. Mix the baking powder with a small amount of flour, so it will be better distributed throughout the dough. You can replace it with soda (1 teaspoon) quenched with 3% vinegar (1 tablespoon). There is no need to mix it with flour separately. Immediately add to the oil mixture. Add flour in portions. Since the properties of flour may differ, you may need more or less of it. Focus on the consistency of the dough. It should be plastic and soft.
STEP 6

There is no need to knead the dough for a long time so that the butter does not melt and flow from the warmth of your hands. Gather the dough into a ball. Divide it into two equal parts. Form them into 2 plates, wrap them in cling film and put them in the freezer for half an hour.
STEP 7

Prepare the ingredients needed for the filling. Which plums are best? Take sweet and sour slightly unripe fruits. When baked, overripe fruits that are too soft will turn into mush and lose their shape, which will negatively affect the appearance and taste of the baked goods.
STEP 8

Prepare the cream. To prevent the contents from splashing around the kitchen while whipping, use a tall container. Combine well-chilled mascarpone cheese, egg and powdered sugar. You can replace the powder with sugar, but then you will have to beat longer for the sugar crystals to completely dissolve.
STEP 9

Beat the cream with a mixer at high speed until smooth. If desired, you can add a tablespoon of aromatic cognac.
STEP 10

Rinse the plums under running cold water. Dry them with paper towels. Cut the fruit in half lengthwise and remove the seeds. Cut each half into 2 more pieces. Turn on the oven to 180 degrees in advance.
STEP 11

Remove the dough from the freezer. Grate the first plate on a coarse grater into a parchment-lined pan. Tamp down lightly. It is better to take a mold with high sides so that the fruit juice does not leak out and the cake does not burn. It is convenient to use a detachable cake container. It will be easier to remove finished baked goods from it.
STEP 12

Spread whipped mascarpone cream onto the dough. Level the surface with a silicone spatula. Mix sugar and cinnamon in a separate container. Be careful when adding cinnamon. This spice has a rather pungent aroma, so do not add more of it than indicated in the recipe, otherwise the taste of the baked goods will be ruined.
STEP 13

Place plum slices on top. Sprinkle them evenly with the sugar and cinnamon mixture to caramelize them as they bake.
STEP 14

Grate the second part of the dough on top. Bake the pie for about 40 minutes in an oven preheated to 180 degrees. Consider the features of your technique; you may need to change the baking time and temperature. How to check the readiness of the pie? When you see that the top of the baked goods has browned, pierce it with a wooden toothpick. If it comes out dry, it's ready. Remove the cake from the pan after it has cooled, otherwise it will break. Enjoy your tea!
