STEP 1
How to bake shortbread pie with apples? Prepare all the necessary ingredients and necessary equipment (a springform pan, containers in which the filling and dough will be prepared, a knife, a vegetable peeler, a cutting board). Remove the butter from the refrigerator in advance, since it is necessary to use softened butter during the cooking process.
STEP 2
First, prepare the pie filling. Choose the apple variety according to your taste. If you prefer more sour varieties of apples, then use Antonovka or Bogatyr - these are usually green apples. If you like it sweeter, then take red apples. Wash the apples thoroughly. Using a vegetable peeler, peel them, remove the core and seeds, then cut the apples into small pieces. Their size should be no more than 1 cm x 1 cm.
STEP 3
Now pour the juice of one lemon into the container with the apples, add brown sugar, add starch and cinnamon. Mix all ingredients and leave for 30 minutes at room temperature. During this time, juice will release from the apples. Note. The amount of sugar in the filling can be increased or decreased. This depends on two factors: the acidity of the apples used and personal preference.
STEP 4
Now prepare the dough for the future pie. To do this, sift the flour and baking powder through a sieve. Then add the remaining ingredients: sugar, soft butter, egg, a little salt and lemon zest (I grated it on a fine grater). Mix all the ingredients with your hands, combining them together. Do this until the dough begins to come together into crumbs and small pieces.
STEP 5
Cover the bottom of the springform pan with parchment (I have a 24 cm pan). Pour 2/3 of the dough crumbs onto the bottom, level and lightly compact.
STEP 6
Place apple filling on the bottom.
STEP 7
Sprinkle the remaining dough evenly over the top of the pie. Preheat the oven to 180°C. Bake the pie for 35-45 minutes until the top is golden brown. Determine the exact baking time based on your oven.
STEP 8
If desired, you can sprinkle the pie with powdered sugar before serving. Enjoy your tea!
