I had shortbread apple pie for tea today. I kneaded the dough according to the recipe, wrapped it in cling film and put it in the refrigerator. While the dough was in the refrigerator, I washed, peeled and cut the apples. I sprinkled them with lemon juice. I took out the dough, divided it into 2 equal parts and rolled it out into 2 circles. The first one, I placed on a baking sheet covered with parchment paper, placed apples on top and sprinkled them with sugar and cinnamon. I cut the second round of dough into circles and wrapped each piece as described in the recipe. Carefully transferred the dough onto the pie, sealed the edges and set it to bake.
