Step-by-step preparation
STEP 1
To prepare the rich soup of oriental cuisine, shurpa, we prepare the necessary products with spices, thoroughly wash and dry one kilogram of lamb on the bone.
STEP 2
Cut the lamb into large pieces.
STEP 3
Pour three liters of water into a five-liter pan with a thick bottom, put the chopped meat and put it on the stove, which we turn on at high temperature.
STEP 4
For transparency of the broth and taste, add some carrots with onions and black peppercorns to the pan with meat, then cover with a lid and bring to a boil.
STEP 5
Chop two onions into fairly small cubes.
STEP 6
As soon as the broth in the pan boils, switch the stove to low temperature and skim off the foam.
STEP 7
Place the chopped onions in the pan with the broth and cover with the lid and continue the cooking process.
STEP 8
Cut one carrot into fairly large half rings, centimeter thick.
STEP 9
After a little over an hour, when the meat is completely cooked and separated from the bone, place the chopped carrots in the pan.
STEP 10
Place the potatoes, cut into four pieces, into the pan and raise the temperature of the stove.
STEP 11
Cut two bell peppers into large strips.
STEP 12
Cut two hundred grams of tomatoes into large slices and place in a common pan.
STEP 13
Add salt to taste and mix all the ingredients in the pan.
STEP 14
Place the Dungan pepper and bell pepper cut into rings into the pan, stir and cover with a lid, then simmer the vegetables at low temperature for about seven minutes.
STEP 15
Add half a teaspoon of cumin to the pan, two tablespoons of dried basil and parsley, one bay leaf, a mixture of peppers to taste and one red hot pepper.
STEP 16
Close the pan with a lid and let the soup brew for about ten minutes, after which the hearty and aromatic shurpa is ready to eat.
