Salad with apple and dried duck breast

Fresh apples in this salad create a simply amazing taste! A classic of the genre, but in an unexpected interpretation :) This is one of my favorite salads. Apples emphasize the exquisite taste of dry-cured meat, and pomegranate adds additional sourness.

    Prepare a sauce from yogurt, honey, season with salt to taste. Cut the apple as desired and season with sauce.

    Mix the washed lettuce with the apple and the rest of the sauce. Place on a plate.

    Cut the dried meat into thin slices. I have my own duck breast. You can use any other dry-cured ham, such as jamon or prosciutto.

    Add slices of dried meat and pomegranate seeds to a plate with an apple and lettuce leaves.

Indeed, how a pomegranate decorates any dish! Our girls found a use for it. And the salad is very good, but we can’t find dried duck, we’ll have to exchange it for meat, it’s good that Anka wrote about a replacement, this salad has such a simple and at the same time very noble taste, bravo!

I will soon publish step-by-step preparation of dried meat, but in short, there is nothing complicated here. I take duck or chicken breast or beef, rub it with salt and sugar (2 tbsp 1 tbsp), crushed juniper berries, freshly ground pepper (any spices to your taste) and leave it in the refrigerator for a day. Then rinse, dry and hang on the balcony, or you can leave it in the refrigerator. It will be ready in 5-7 days.

Thank you, Anka, good recipe, I gave up store-bought sausages a long time ago, so I simply need this kind of meat preparation. Do you buy juniper berries at the pharmacy or pick them yourself, otherwise I haven’t seen anything here.

I also rarely buy sausages, I make dry-cured ones myself, sudzhuk for example) I buy juniper berries in the supermarket, they are sold along with all the spices.
