STEP 1
Let's prepare the ingredients according to the list. In order for the taste of the pie to live up to its name, you need to use natural and high-quality products for its preparation: butter, cottage cheese, chicken eggs. The butter must be removed from the refrigerator in advance so that it is at room temperature. Instead of butter, if desired, you can use margarine; you will get a more budget-friendly pie, but less healthy in taste. Add sugar, a pinch of salt.
STEP 2
Grind the ingredients with a mixer or a hand whisk until the sugar is completely dissolved.
STEP 3
Add wheat flour, sifted and combined with baking powder and a pinch of vanillin, to the bowl. Mix the ingredients and grind the dough into crumbs. The dough is ready.
STEP 4
Making the curd filling. If the natural country cottage cheese is grainy, then it is better to punch it with a blender or grind it through a sieve. Place cottage cheese in a blender bowl or deep bowl, add a couple of tablespoons of heavy cream, sugar, a pinch of salt and vanilla, and beat in a chicken egg. Using a whisk or blender, mix the ingredients until the mixture is homogeneous in consistency.
STEP 5
Grease the pie pan (sides and bottom) with butter. Place two-thirds of the shortbread crumbs into the mold, forming sides from the dough. Place the curd filling in the center of the dough. It should not be too liquid and at the same time dry, so when preparing it, the consistency should be changed by using and adding heavy cream.
STEP 6
Sprinkle the remaining shortbread dough over the filling, level the shortbread crumbs so that the surface of the pie is smooth and without slides. Preheat the oven to 180 degrees. We bake the pie for about 30 minutes, you need to focus on the operation of your oven, the size of the mold and the volume of the pie. The top of the pie should be slightly browned and baked inside.
STEP 7
We take the pie out of the oven, let it cool slightly in the mold and take it out onto a dish, cut it into pieces and serve with tea, coffee or milk. Enjoy your tea party!
