STEP 1
How to make potato pancakes in the oven? Prepare your food. Choose medium-sized potatoes, I had 3 because I cooked half the portion. If you wish, you can add onions and garlic to the potato pancakes; we like pancakes without them.
STEP 2
Wash the potatoes well under running water, then peel. Grate it directly into the bowl in which you will knead the dough, this way there will be less dirty dishes. Which grater to grate it on is a matter of taste. Real Belarusian potato pancakes are grated on the finest grater, but modern recipes allow for coarse grating. I chose the medium size.
STEP 3
Now squeeze the resulting potato mixture thoroughly with your hands to get rid of excess liquid - it will interfere with the browning of the potato pancakes. Here, I still advise you to take a colander and not skimp on dishes. It will be much more convenient. Drain off the squeezed liquid. You should be left with fairly dry potato chips.
STEP 4
Beat eggs into it, add salt and pepper to taste. Add flour. To make the potato pancakes crispier, you can replace some of the flour with potato starch.
STEP 5
Mix the potato mixture thoroughly.
STEP 6
Take a baking tray of the appropriate size. If your baking sheet does not have a non-stick coating, then it is better to cover it with parchment - otherwise the potato pancakes may stick. Grease the paper with a small amount of odorless vegetable oil (if you are using a baking sheet without paper, grease it with more oil). Place potato pancakes on paper in the form of flat cakes. From half the portion I got 9 pieces.
STEP 7
My potato pancakes turned out to be a little large; they could have been made smaller and thicker. Place the pan with potato pancakes in the oven, preheated to 190°C (I use electric, top-bottom mode) for about 30 minutes. Draniki should be browned on the bottom. They didn’t want to turn brown for a long time, so I turned up the temperature to 200°C. When this happens, remove the pan and use a spatula to turn the pancakes over to the other side. Focus on your oven.
STEP 8
Return the pan to the oven and keep the pancakes there for another 15 minutes. Remove the hot potato pancakes to a plate and serve immediately.

Serve sour cream with pancakes. Bon appetit!
