STEP 1
How to stew pork with vegetables in a frying pan? The recipe is very simple, although it has a lot of ingredients. To begin, prepare the necessary ingredients according to the list. In addition to the vegetables specified in the recipe, you can add vegetables of your choice. It can be eggplant, squash, potatoes, onions, instead of simple zucchini take zucchini, etc. Oil - any vegetable oil.
STEP 2
Wash the pork, dry it and cut into medium pieces. I used pork tenderloin, but you can use any other boneless pork tenderloin.
STEP 3
Wash and dry all vegetables. Cut the zucchini into quarters. If the zucchini is young and its skin is tender, it is not necessary to cut it off. It is enough to rub it well with a brush.
STEP 4
Peel the carrots and cut into quarters.
STEP 5
Peel the bell pepper from seeds and cut into medium cubes or strips. You can use any color of bell pepper. Or replace it with regular sweet peppers, which we usually use for stuffing.
STEP 6
Cut the tomato into halves and grate the pulp on a fine grater, cutting off the skin. You can also remove the skin first and grind the pulp in a blender. Or just use store-bought chopped tomatoes.

Finely chop the garlic with a knife.

Wash the greens, dry and finely chop. I used parsley and cilantro as greens, but you can replace or supplement this set with herbs to your liking.
STEP 9
Heat vegetable oil in a deep, thick-bottomed frying pan over high heat. Add the pork and stir-fry until golden brown, about 10 minutes. At the end, salt and pepper the meat.
STEP 10
Add carrots and garlic to the meat and fry over medium heat, stirring, for about 5 minutes.
STEP 11
Add the bell pepper and zucchini and fry everything together for about 5 more minutes.
STEP 12
Add chopped tomatoes, bay leaves, and water to the pan. Add salt and pepper to taste and stir.
STEP 13
Bring the pork and vegetables to a boil, reduce the heat to low and simmer everything together for about 30 minutes. The exact time depends on the size of your meat pieces, the heat level of the pan, etc. The main criterion for determining doneness is soft, juicy meat.
STEP 14
At the very end, sprinkle everything with chopped herbs and turn off the heat. You can immediately serve the meat to the table with any side dish. Bon appetit!
