STEP 1

How to make poppy seed cake from yeast dough? Prepare the ingredients for the dough. Melt the butter over low heat or lightly melt in the microwave.
STEP 2

Measure out the required ingredients for the dough. Warm the milk slightly. Fresh yeast can be used. How to replace dry yeast with fresh yeast correctly and in what proportion, read the link at the end of the recipe.
STEP 3

Pour warm milk into a bowl, add sugar and yeast, stir.
STEP 4

Sift flour into yeast mixture. Mix well with a whisk until smooth. Cover the dough with a towel and leave in a warm place for about 20 minutes.

The dough will rise noticeably and numerous bubbles will appear on the surface.
STEP 6

In a suitable sized bowl, beat the egg with salt, sugar and vanilla sugar until smooth.
STEP 7

Lay out the suitable dough, stir.
STEP 8

Add the melted and cooled butter, stir.
STEP 9

Sift flour into the resulting mass. The flour must be sifted to saturate it with oxygen. Thanks to this, the dough will rise well and the baked goods will turn out fluffy. But do not add all the flour at once, add about ¾ of the specified volume, as you may need less or more of it. Mix the dough first with a spoon. STEP 10

Add the rest of the flour in small portions, stirring the dough. Focus not on the amount of flour, but on the consistency of the dough.
STEP 11

Knead a soft, tender dough that does not stick to your hands. Cover the dough with a towel and leave in a warm place for 1-1.5 hours to rise.
STEP 12

Prepare the ingredients for the filling. Remove the butter from the refrigerator in advance so that it becomes soft. Take the amount of sugar to taste.

The dough has risen, it has grown 2-2.5 times.
STEP 14

Gently knead the dough and place it on a table sprinkled with flour. Divide the dough into 3 equal parts.
STEP 15

Roll out one piece of dough into a round layer. You can do this directly on parchment. My layer diameter turned out to be approximately 22 cm.

Brush the dough with softened butter, just short of the edges.
STEP 17

Sprinkle the butter layer with sugar, then poppy seeds.
STEP 18

Roll out the second part of the dough and place it on top of the filling.
STEP 19

Similarly, grease the second layer of dough with butter, sprinkle with sugar and poppy seeds.
STEP 20

Place the third rolled out piece of dough on top.
STEP 21

Mark the center of the pie by pressing lightly with a matching cup or pastry cutter.
STEP 22

Cut the dough into four parts, without cutting to the marked center, as in the photo.
STEP 23

Then divide each part in half.
STEP 24

And again, cut each resulting segment into 2 parts. This results in 16 segments.
STEP 25

Lift the two adjacent segments and rotate them 2 times in opposite directions. Connect the ends of the segments and pinch well.
STEP 26

Do the same with the next two adjacent segments.
STEP 27

Form the entire pie in this manner. Cover the cake with a light towel and leave to proof for 15-20 minutes.

Brush the top of the future pie with egg yolk mixed with milk.
STEP 29
