Instead of fillet, you can use whole fish, which must first be cleaned and cut into portions.

    Wash the pollock fillet, dry it and cut into medium pieces. You can replace the pollock with any other red or white, river or sea fish to your taste.

    Wash the tomatoes, dry and cut into slices. If you have cherry tomatoes, cut them in half.

    Peel the onions and cut into thin half rings. You can replace the red onion with regular onion or shallot.

I decided to cook pollock fillet in the oven with onions and tomatoes; I had all the necessary ingredients (except for shallots). I didn't bake the vegetables separately in the oven, but I did stew the onions (with a little grated carrot) in a frying pan on the stove. I put the fried onions in the pan, then laid out the tomatoes cut into slices, and pollock fillet on top. I baked it for about 10 minutes, covering the pan with foil, then about the same amount of time without foil, and periodically poured the gravy in which it was cooked on top of the fish (like pouring chicken while baking in the oven for a golden brown crust, but I did this for juiciness, since visually the fish seemed a bit dry). Served, garnished with fresh tomato slices, lemon and herbs. The fish turned out very tasty and everyone in the family liked it. But I would like to note that according to this recipe, it did not turn out as juicy for me as if I had cooked UNDER the vegetable coat, and not ABOVE it. Thanks for the recipe!
