Good afternoon! As you know, pollock is a healthy dietary fish that contains a lot of valuable microelements, and also contains few bones. Fresh frozen pollock is very affordable, even more affordable than fresh river fish (pike perch, silver carp), and is sold without heads, so there is minimal waste. Today for lunch we prepared pollock baked with vegetables in the oven. It's December, fresh tomatoes and bell peppers are already quite expensive, and they're greenhouse-grown, so we use our own supplies. For many years now, closer to September, we have been buying fresh vegetables (tomatoes and bell peppers) in bulk and freezing them, it’s very convenient. Frozen tomatoes are very easy to peel by making a cross-shaped cut and immersing them in warm water. In addition, prepared dishes from such vegetables are much tastier than with the addition of tomato paste. I know that you can freeze green beans, you need to take this into account for the future... Pollock itself is a bit dry, so you need to cook it accordingly, so that, for example, the batter when frying or, as in this recipe, the vegetables compensate for this. The smell and taste of onions in food is not very welcome in our family, so I did not use it. Thanks to the fact that the carrots were initially fried together with bell peppers and a large number of tomatoes (added 4 pcs), the pollock turned out to be very juicy, aromatic and in also not watery.
