Pizza Caesar in the oven with yeast dough

STEP 1

Products for testing. It is better to take both regular wheat flour and special flour for pizza (You may ask: why? Answer: pizza flour has a higher gluten content. Ideally, pizza flour is made from grains with a gluten content of 12-14.5%, and sometimes even 10 ‒11% Products made from it will have a crispy edge, and the inside will be tender, not rubbery). We take warm water, 35-39 degrees (not warmer, otherwise the yeast will die and the dough will not work). This amount of dough will make 3 pizzas!
STEP 2

We dilute the yeast thoroughly in warm boiled water so that there are no lumps left.
STEP 3

Mix wheat flour and pizza flour and sift through a sieve.
STEP 4

We collect the sifted flour into a mound and make a depression in the center of the mound, pour olive oil into it and add salt.
STEP 5

Knead the dough, kneading everything with your hands from the edges to the center and gradually adding warm boiled water with yeast dissolved in it into the flour.
STEP 6

The result is a pliable, elastic dough. Let's collect it into a ball.
STEP 7

Then we divide the pizza dough into three equal parts and roll each part into a ball. Cover the pizza dough with a clean towel and leave it for 1 hour. During this time it will increase approximately 2 times. After this, the dough can be used to make pizza.
STEP 8

Preparing ingredients for Caesar sauce.
STEP 9

Grind the cheese on a fine grater, finely chop the garlic and anchovies.
STEP 10

In a separate container, whisk the egg yolk and gently mix all the ingredients for the sauce until smooth, without beating.
STEP 11

Products for filling. We sort out the romaine lettuce, wash it, and drain it. First boil the chicken breast in salted water until tender. Take one of the pieces of the already risen pizza dough. Its average weight is 210-250 grams.
STEP 12

Grate Parmesan. We tear the Romaine lettuce randomly into small fragments with our hands and season with Caesar dressing.
STEP 13

Using your fingers, stretch a circle of dough onto the work surface. We get a thin round pancake 30 cm in diameter.
STEP 14

We carefully transfer it to a baking sheet, adjusting the edge so that it looks neat and round.
STEP 15

Spread Caesar sauce on top of the dough, sprinkle with grated Mozzarella cheese and pieces of chicken breast. Place in the oven.
STEP 16

Thin crust pizza in pizzerias is baked in a special pizza oven at 400 degrees until fully cooked. I baked it in a regular oven at 250 degrees until golden brown.
STEP 17

Cut the finished pizza into eight pieces using a sharp pizza knife. Place the dressed Caesar salad on top of the pizza. Sprinkle grated Parmesan cheese on top of the Caesar salad. Grease the edges of the pizza with olive oil. That's it, Caesar pizza is ready! Enjoy :)...
