Pie with frozen berries in the oven

Fragrant, airy, sweet, with a slight sourness! Pie with berries in the oven can be prepared all year round: from frozen berries in winter, from fresh berries in summer. Soft fluffy sweetish dough goes well with berry sourness and lemon glaze. Convenient baking for everyday life and holidays.

  1. STEP 1

    STEP 1

How to make a pie with frozen berries in the oven? Very fast and simple. To begin, prepare the necessary ingredients according to the list. Take the highest grade flour. You need large, choice eggs. Butter should be at room temperature, so remove it from the refrigerator in advance.

  2. STEP 2

    STEP 2

Combine eggs at room temperature with sugar and vanilla sugar and beat with a mixer until fluffy. The airiness of your cake depends on how you beat the eggs. You can’t beat the mixture until it’s white and thick—the whites will lose the air bubbles that lift the dough. And in this case, even baking powder will not help. The dough will either not rise at all or rise very weakly.

  3. STEP 3

    STEP 3

Add soft butter and milk and mix with a mixer. the mass will become dense and airy.

  4. STEP 4

    STEP 4

Add sifted flour with baking powder to the egg-butter mixture. Mix everything with a mixer until smooth. You will get a soft, thick dough. Please note that you may need more or less flour depending on the quality of the flour itself and the size of the eggs. Therefore, focus on the consistency of the dough. The dough is ready.

  5. STEP 5

    STEP 5

Now prepare the filling. You can make this pie with different berries - raspberries, lingonberries, currants, cranberries, blueberries. But it is preferable to use sour berries. I have a mixture of red and black currants.

  6. STEP 6

    STEP 6

Without defrosting, divide the berries into two equal parts. Sprinkle one half of the berries with flour. The second part of the berries will be needed for the top of the pie.

  7. STEP 7

    STEP 7

Gently fold the berries, rolled in flour, into the dough.

  8. STEP 8

    STEP 8

Line a baking dish (I have 11x30 cm) with oiled parchment and place the dough into it.

  9. STEP 9

    STEP 9

Scatter the remaining half of the berries on top. Bake the pie in a preheated oven for about 40 minutes at 180°C. Then leave the pie in the turned off oven for another 5-10 minutes until the top browns.

  10. STEP 10

    STEP 10

While the cake is baking, prepare the frosting.

  11. STEP 11

    STEP 11

In a bowl, mix powdered sugar, lemon juice and water. Mix everything until you obtain a liquid consistency.

  12. STEP 12

    STEP 12

Remove the finished pie from the pan and cool slightly. Drizzle with icing sugar and serve. Bon appetit!

For Sunday family tea, I chose a pie with frozen berries in the oven. I had been eyeing this recipe for a long time, but I doubted that the frozen pie would bake. Still, I trusted the author and started cooking. The dough was kneaded perfectly, the eggs were not overbeaten, the butter was soft) I used 20 g less flour. I also discovered that I had run out of baking powder. I replaced it with a level teaspoon of soda and extinguished it with lemon juice. The dough turned out like a thick cream. I took black currants from the berries, rolled them in flour and added them to the dough. I placed some currants and raspberries on top. I baked it for 50 minutes, the middle took longer to reach the edges. I made the glaze according to the recipe, but for me it came out a bit runny and when applied to the cake it did not leave any white streaks. But it was well absorbed into the surface of the pie and added a pleasant sourness. Most importantly, the pie was baked well! It turned out airy and soft. Blackcurrant perfectly complements the sweet crumb. Lemon juice also adds sourness. Complete harmony) A successful recipe, I recommend it!
