    How to make homemade pasta carbonara with mushrooms, bacon and cream? It's easy enough. To begin, prepare the necessary ingredients according to the list. You can replace spaghetti with fettuccine or other long pasta. You can take cream with a lower fat content - from 20%. You can replace Parmesan with other dry or semi-dry varieties of cheese. If maximum resemblance to Italian pasta is not necessary for you, you can replace Parmesan with regular cheese such as Russian.

    Wash the mushrooms and cut into slices. You can use both fresh and frozen mushrooms. But keep in mind that you need to take a third or half more frozen ones, because much more moisture will evaporate from them.

    Cut the bacon into thin strips. I used raw smoked bacon, but you can use boiled smoked or raw.

    Finely chop the garlic. You can replace fresh garlic with 1/2 tsp. dry.

    Finely chop the parsley.

    In a glass or bowl, combine egg yolks, cream, grated Parmesan, salt and pepper. Stir the sauce until smooth. If you want more sauce, you can use more cream.

    Place the mushrooms in a dry frying pan or saucepan with a thick bottom and evaporate excess moisture from them over medium heat. If you wish, you can add a drop of vegetable oil to the pan.

    At the end, add the garlic and fry everything together for another 1-2 minutes.

    Boil spaghetti in plenty of salted water until al dente (one minute less than package directions). Drain all the water from the finished spaghetti, leaving the pasta in the pan.

    Return the pasta pan to low heat. Add fried mushrooms with bacon and herbs. Mix everything.

    Pour in the cream cheese sauce and stir quickly until all the yolk and Parmesan are incorporated into the pasta. Remove the pan from the heat.

When you have bacon at home, the question of “what to cook” completely disappears - carbonara pasta with mushrooms, bacon and cream. The dish is prepared very simply, but has an incredible taste. Unfortunately, there were no champignons at home, of course, with them the dish would have become even tastier. Therefore, if you have the opportunity to run to the store, I advise you to do so. I usually prepare the sauce separately, but here I decided to follow the author’s advice and did it as directed. It turned out incredibly delicious!
