STEP 1
Prepare the necessary ingredients. Wash the vegetables in advance. To do this, you can use a brush, especially when it comes to potatoes. Moreover, we will cook it in its uniform.
STEP 2
Boil the potatoes in their jackets. To do this, place the washed fruits in a saucepan and fill with water. When the water boils, salt it and cook the vegetables until tender. After boiling, it usually takes up to 20 minutes to cook. Provided that you took root vegetables of the same average size. At the same time as the potatoes, boil the eggs, let them simmer for 5-8 minutes until they are hard-boiled.
STEP 3
Cut the onion into small cubes. Don’t forget to water the knife with tap water, this will prevent “onion tears”)) And yes, usually green onions are added to okroshka, but I like it with onions, so I add them. You can repeat after me or do it your own way. Below I will tell you how to get the perfect okroshka with regular onions.
STEP 4
Grind the chopped onion with salt (about 0.5 teaspoon) until it releases juice. This will relieve it of bitterness and no one will understand whether there are green onions in the okroshka or not. As for me, it’s even tastier with onion, it adds a slight spiciness to the finished dish. It is advisable to add onions to okroshka at the very end.
STEP 5
Cut the boiled sausage into small cubes. Check if you have removed the skin from it, sometimes you forget about it, and it remains (but you wouldn’t want to)).
STEP 6
Cut fresh cucumbers into cubes. If the skin is hard, it is better to peel it. I'm fine with the peel, so I left it.
STEP 7
Cut the radish into cubes in the same way. Not everyone likes the taste of radishes, so you can add them as desired. In addition, you can grate it instead of cutting it.
STEP 8
By this time the eggs are most likely already boiled - we peel them and also cut them into cubes.
STEP 9
Peel the boiled potatoes and cut them in the same way as the other ingredients.
STEP 10
Chop the greens. Dill and parsley are ideal for okroshka. You can leave one thing, however.
STEP 11
Season the okroshka with sour cream according to the classics. And now is the time to add the onion, grated with salt!
STEP 12
Add a little salt to taste (after all, the onion, as you remember, was already with salt).
STEP 13
If desired, add a little mustard, it will give the okroshka a slight piquancy.
STEP 14
We season the okroshka with homemade sweet and sour kvass - this is ideal, but you can also use kvass from the store. As for me, the taste will not be the same - it’s not for everyone)
