Okroshka with green peas on kvass with sausage
Step-by-step preparation
STEP 1

Prepare the necessary products according to the list. Boil the potatoes. To do this, wash the tubers thoroughly and place them unpeeled in boiling water, this will better preserve the beneficial substances. Boil the potatoes for 25 minutes, then cool. Boil the eggs hard (8-10 minutes after boiling). Cool by pouring cold water.
STEP 2

Rinse the herbs (dill, parsley, green onions) well and dry with paper towels. Finely chop. Lightly salt and masher until it becomes soft and releases juice and aroma.
STEP 3

Peel the cooled potatoes. It should not be added warm, otherwise it will ruin the taste of the cold dish. Cut it into approximately equal cubes, as well as boiled sausage, shelled eggs, and cucumber. If the cucumber has a thick skin, peel it. It is not necessary to remove it from a young fetus. You can grate it on a coarse grater as you like. I recommend cutting the radishes smaller.
STEP 4

In a large bowl, combine all the cuttings, herbs, and green peas. I don’t add any more salt; everyone will then add more salt in their plate to taste. Cover the bowl with a lid or cover it with cling film and put it in the refrigerator.
STEP 5

Place the preparation for okroshka into portioned plates and fill with kvass. You can replace it with whey, kefir, mineral water, ayran, filtered water with the addition of vinegar. Then everyone adds whatever they want to taste. For example, you can put a little mustard, horseradish (1 tsp each), sour cream, mayonnaise. Any of the options will be delicious. Bon appetit!
