Oatmeal cookies with honey

STEP 1

How to make honey oatmeal cookies? Prepare all the necessary ingredients. Take instant flakes and preferably small ones. Then the cookies will turn out more tender, and the flakes in them will look like nuts. Remove the butter from the refrigerator in advance so that it becomes soft.
STEP 2

Place oatmeal in a bowl and add baking powder. If you use baking soda, then you need to take 1/3 teaspoon and add the same amount of citric acid, which needs to be turned into powder. Lemon is needed to extinguish the soda in the dough, since it contains no acid and there will be no leavening reaction.
STEP 3

Add sugar to the cereal and mix everything. You can take not only white sugar, but brown or cane sugar is perfect.
STEP 4

Sift premium or first grade wheat flour into a bowl with cereal and sugar through a fine sieve. This will saturate the flour with air and get rid of specks and flour lumps.
STEP 5

Mix everything thoroughly until the products are evenly distributed.
STEP 6

Take a chicken egg and wash it in warm water and soda, as there may be harmful bacteria on its surface. Crack the egg into the bowl with the flour mixture.
STEP 7

Add soft butter to a bowl. If desired, you can replace it with margarine, but the cookies will not be as tender as with butter.
STEP 8

Add bee honey to the bowl. You can use any honey; the taste and color of the cookies will depend on its type. With buckwheat or heather honey the cookies will turn out darker. Take liquid honey. If you have candied honey, then place it in a container, which you place in a larger bowl filled with hot water. While stirring the honey, wait until it melts.
STEP 9

Mix everything to a soft, sticky dough. Since different manufacturers have different flour properties, you may need less or more of it. Focus on the required dough consistency.
STEP 10

Line a baking tray with baking paper or a special silicone mat. Using a tablespoon, place the cookies at a distance and trim the edges. If the dough sticks to the spoon, you can try moistening it with water, this will make it easier to place the dough on the baking sheet. If you want a cookie with a crispy top but soft inside, leave it as is. And if you prefer completely crispy cookies, press the blanks onto the baking sheet, making them flatter.
STEP 11

Place in an oven preheated to 180 degrees and bake for 10-15 minutes. The times are approximate as they will depend on your oven and what kind of cookies you prefer.
STEP 12

Cool the finished cookies completely and serve with aromatic tea, coffee or cocoa. Also delicious with cold milk. Bon appetit!
