STEP 1
How to make a Number 8 cake? First, prepare the necessary ingredients for the dough.
STEP 2
Place butter and honey in a non-stick pan. Place the pan over low heat and melt the butter. It should almost melt, but not have time to heat up.
STEP 3
Beat eggs into a bowl and add sugar. Mix them thoroughly with a whisk.
STEP 4
When the butter has almost melted, add the egg mixture to it. Bring the mixture to a boil while stirring.
STEP 5
Remove the pan from the heat, immediately add baking soda and stir. The reaction of honey with soda will begin, the mass will foam and increase in volume. Cool the honey mass until warm or room temperature.
STEP 6
Add flour to the honey mixture and knead the dough. You may need a little less or more flour, use the consistency of the dough as a guide. At first it will seem that the dough is asking for more flour, but you don’t need to add much. The dough may stick to your hands a little. STEP 7
Place the dough in a bag and put it in the refrigerator for an hour. During this time it will rest and it will become convenient to work with. It will stop sticking.
STEP 8
For the number 8 stencil, fold the A4 sheet in half and on one half of it draw half of the number 8. Cut it out along the contour. This will make it symmetrical. If desired, you can also cut out the inner circles digitally. Turn on the oven to 180 degrees in advance
STEP 9
Roll out the finished dough to approximately 4-5 mm thick. Cut out the number 8 along the contour of the stencil. Prick the workpiece with a fork over the entire surface and bake for 4-7 minutes in an oven preheated to 180 degrees. Time and temperature are approximate, use your oven as a guide. STEP 10
Cool the finished cakes.
STEP 11
Prepare the necessary ingredients for the cream. Remove the curd cheese from the refrigerator in advance; it should be at room temperature. STEP 12
Using a mixer, beat the cream with powdered sugar into a fluffy cream. Then stir in the cream cheese.
STEP 13
Fill a pastry bag with cream, cut off the tip and pipe cream over the entire surface of the number. If desired, you can add a little berry confiture to the layer of the cake.
STEP 14
Layering layer upon layer of cake, assemble the cake. Melt the chocolate in a water bath or in the microwave. Using melted chocolate, outline the inside of the number 8.
STEP 15
Cover the top of the cake with cream. Cover the cake with something so that it can soak well. I usually put it in a cake box and close it tightly so that all the moisture from the cream is absorbed into the cake layers, thereby soaking them well. Put the cake in the refrigerator overnight.
STEP 16
Decorate the finished cake as you wish. You can put fruits or sweets on it.
