STEP 1
Mix honey, sugar and spices (cinnamon, ginger) in a saucepan and put the mixture on the fire. Over high heat, bring the mixture to a boil, stirring constantly. Reduce heat and cook until sugar dissolves. Remove from heat. Add soda and butter. Cool the mixture to 60 degrees. Add the egg and mix with a mixer at medium speed. Add sifted flour in several stages. Wrap the finished dough in film and refrigerate for 2 hours. We bake gingerbread cookies at 180 degrees.
STEP 2
For protein glaze (icing), you need to mix all the ingredients into a homogeneous mass. Mix powdered sugar, egg white and citric acid with a mixer at low speed. There is no need to beat for a long time, just until smooth. You can even do without a mixer. The finished glaze should be immediately covered with cling film in contact, as it dries very quickly.
STEP 3
The glaze turns out thick. We literally add water drop by drop to a small part of the glaze and achieve the desired consistency. We also color the glaze in small parts with food coloring and place it in small pastry bags (bags). We make two bags of icing of the same color, but of different consistency, a thicker glaze for the sides and more liquid for filling the whole gingerbread. Make a small hole in the corner of the bag and start painting
STEP 4
And now I offer you ideas for decorating gingerbread cookies. The simplest option: cut out gingerbread cookies using cookie cutters (cuttings). I cut out the bunnies and decorated the eyes and mouth with icing.
STEP 5
If you don’t have any molds or cutouts, you can simply use a glass to cut out round gingerbread cookies. Draw snowflakes on round gingerbread cookies using thick icing.

Or you can fill the entire gingerbread with orange glaze, make streaks using a toothpick from white liquid glaze and we will get tangerines.

To cut out the houses, I used a plastic clay mold that I borrowed from my son. There were two houses: red and green, but the red one ate the red one so quickly that I didn’t have time to take a photo.

And by turning the man upside down, you can make the faces of Santa's reindeer. I made the brown icing by mixing red and green icing.

If there is no food coloring, you can get by with just white icing.
