STEP 1

How to make red velvet cupcakes at home? Prepare all the necessary ingredients. For this recipe, I advise you to strictly measure the ingredients on a scale. Even eggs. To do this, I broke two eggs into a cup, beat them well and then measured them. Take low-fat kefir.
STEP 2

First, in a separate bowl, mix all the dry ingredients - flour, sugar, cocoa and baking powder. Sift dry ingredients through a sieve. Read about baking powder in a separate article, link at the end of this recipe.
STEP 3

In another bowl, combine all liquid ingredients: eggs, butter and kefir. Add a teaspoon of food coloring there.
STEP 4

Mix all ingredients well with a mixer. It turns out to be such a bright mass.
STEP 5

Now we need to combine the dry with the liquid: pour the flour in parts into our red mass. Stir with a spoon. A mixer is absolutely not needed here. We should just wet all the flour, no more. There should be no dry lumps left. The dough may seem a little loose and uneven - this is how it should be, this method will give an unprecedented softness to the crumb, believe me! STEP 6

Place special paper cupcake liners in a cupcake pan (I have silicone, but it could just be iron). Fill them with dough, about 2/3 full. From this amount of dough I got 10 pieces. Bake in the oven at 175°C. Do not open the door for the first 12 minutes, then check every 2 minutes. They should feel springy to the touch and a toothpick should feel dry when inserted and removed. Mine took about 20 minutes to bake.
STEP 7

How to make cupcake cream? Prepare the necessary products. The butter must be removed from the refrigerator in advance so that it has time to soften.
STEP 8

Beat the butter with powdered sugar and vanilla sugar with a mixer.
STEP 9

Add curd cheese and beat until smooth and fluffy.
STEP 10

Remove the finished cupcakes from the mold and let them cool well on a wire rack. Place the cream in a pastry bag and decorate the top using an open star tip. Serve the Red Velvet Cupcakes with Cheese Cream to the table. Bon appetit!
