    How to make red velvet cupcakes at home? Prepare all the necessary ingredients. For this recipe, I advise you to strictly measure the ingredients on a scale. Even eggs. To do this, I broke two eggs into a cup, beat them well and then measured them. Take low-fat kefir.

    First, in a separate bowl, mix all the dry ingredients - flour, sugar, cocoa and baking powder. Sift dry ingredients through a sieve. Read about baking powder in a separate article, link at the end of this recipe.

    In another bowl, combine all liquid ingredients: eggs, butter and kefir. Add a teaspoon of food coloring there.

    Mix all ingredients well with a mixer. It turns out to be such a bright mass.

    Now we need to combine the dry with the liquid: pour the flour in parts into our red mass. Stir with a spoon. A mixer is absolutely not needed here. We should just wet all the flour, no more. There should be no dry lumps left. The dough may seem a little loose and uneven - this is how it should be, this method will give an unprecedented softness to the crumb, believe me!     Place special paper cupcake liners in a cupcake pan (I have silicone, but it could just be iron). Fill them with dough, about 2/3 full. From this amount of dough I got 10 pieces. Bake in the oven at 175°C. Do not open the door for the first 12 minutes, then check every 2 minutes. They should feel springy to the touch and a toothpick should feel dry when inserted and removed. Mine took about 20 minutes to bake.

    How to make cupcake cream? Prepare the necessary products. The butter must be removed from the refrigerator in advance so that it has time to soften.

    Beat the butter with powdered sugar and vanilla sugar with a mixer.

If you want to surprise your family, be sure to make red velvet cupcakes! So delicate in texture, with a light chocolate aftertaste and, most importantly, eye-catching with its bright color... I really liked the simple and clear recipe for cupcakes - separately combine all the dry ingredients and all the liquid ones, and then mix. Just be sure to use odorless vegetable oil (my cupcakes had a slight smell of vegetable oil, this did not spoil the taste of the cupcakes as a whole, but it is better, of course, not to have it). I used dark confectionery cocoa powder, so the color turned out close to burgundy, I think if you add regular cocoa powder, the color will be more scarlet (maybe it also depends on the dye). Although it was dark cocoa, as I understand it, that gave the cupcakes a light chocolate taste, this may not be the case with light cocoa. I used gel red dye, not a full teaspoon. Bake for 22 minutes at 175 degrees (top-bottom without convection). I simply covered the finished cupcakes with whipped cream (because I didn’t have any cream cheese at home). I really liked the idea of ​​using red crumbs as a decoration, I didn’t spare a whole cupcake, I grated it on a fine grater and left it to dry. I will use the remaining velvet crumbs to decorate other desserts, it looks beautiful. By the way, the inside of the cupcakes turned out even brighter than the outside. And in general, cupcakes look somehow very “elegant”, festive, they can adequately replace a cake on a festive table. And they taste tender, moderately sweet, with a light chocolate note.
