When all the ingredients are well mixed, place the container with the contents in a suitable sized pan of boiling water for 10-15 minutes. With constant stirring, cook the mixture until it becomes a homogeneous air mass.

    Pour about a glass of flour sifted through a sieve into this mass. Mix well and cool the resulting mass. To speed up the process, you can place the container with the dough in cold water for 10 minutes, stirring it occasionally. In the slightly cooled but still warm dough, gradually add another 1.5 cups of flour, sifted through a sieve. It is important to sift the flour to saturate it with oxygen. Then the baked goods will turn out airy and rise well during baking.

    Knead the dough first with a fork, then with your hands. Keep in mind that you may need more or less flour - focus on the dough itself and add flour in parts! The dough should hold its shape well, but at the same time be soft and elastic.

    Sprinkle the work surface with flour to prevent the dough from sticking. Roll out the prepared dough into a square shape. The thickness should be approximately 0.5 cm. Cut the rolled out layer into squares of equal size. I got 9 pieces.

    Place jam on half of each square, then cover it with the other half and press the dough well around the perimeter so that the filling does not leak out. If you wish, you can make the gingerbread more beautiful using available tools, such as a fork or special tools for cutting dough. Choose thick, seedless jam.

    You can also decorate the top of the gingerbread cookies with any design using special cutouts or pieces of dough. Now place the prepared gingerbread cookies on greased baking paper. At this time, preheat the oven to 180°C. Bake the gingerbread cookies at this temperature for 10-12 minutes.

I made these gingerbread cookies, maybe I did something wrong, of course, although everything was strictly according to the recipe, but when the cooled dough was kneaded with flour, it was like rubber. When I baked it, they rose, but it didn’t turn out as loose as in the photo

Here is the photo. Flour, that’s the reason. You really don’t indicate the size of the glass. Because after the first glass of flour, I couldn’t even stir the dough with a whisk. It was very thick.
