Special gingerbread cookies for the New Year and Christmas (in some regions of Russia they are also called kozuli, kozyuli) have always been prepared from a special long-ripening gingerbread dough. If everything is done correctly, according to the old recipe, everything should take about a month. That is, this is a long and responsible process, for which not every housewife has enough time. So in the modern world, everyone is accustomed to using faster, faster cooking methods. And the test is only allowed to sit for a few days - at best. At worst - one night.

The basis of New Year's gingerbread always includes one of three main products: honey, ginger, cinnamon. In a number of recipes they are used all together. A prerequisite is that the gingerbread cookies must be painted. That is, apply glaze on them, sugar, milk, white, colored - any. The main thing is that it turns out beautifully for the New Year. In the old days, Christmas trees were decorated with these and treated to friends and neighbors.

To ensure that gingerbread cookies have a specific taste, color and aroma, they include wheat and rye flour. And also a lot of seasonings and spices: star anise, cloves, cardamom, zest, rum, nutmeg and - of course - ground pepper. Instead of white sugar - brown.

There are many shapes you can buy in the store, including gingerbread men, houses, Christmas trees, biblical Christmas story characters, and so on. The most difficult part of preparing this treat is kneading the dough. Everything else is done easily, simply and quickly, as is the case with any cookies. The dough is rolled out into a layer, figures are cut out of it and baked in a preheated oven.

If you want to make real New Year's gingerbread cookies, it is better to use a proven recipe, similar in composition to the old one. Those where the dough needs time to mature. Only this makes truly the best products. It needs to be left in the cold for about two to three weeks. It is better in a clay pot, under a closed lid. And start baking directly on Christmas and New Year's Eve.
