    Let's start by preparing the "zhenka". Pour half the sugar into a thick-bottomed pan (without water) and simmer over low heat until it turns dark brown and a bluish smoke appears.

    Boil half a glass of water and carefully pour boiling water in parts (this is very important, do not pour cold water, otherwise the hot caramel will splatter and you can get burned!!!). Add the second half of the sugar and melt. Remove from heat and cool for 10-15 minutes. During this time, the temperature of the caramel will drop to approximately 70 degrees.

    Add softened butter, cinnamon and nutmeg to the pan with the caramel. Stir until the oil is completely dissolved. Cool completely.

    Add 1 whole egg and two yolks. We put the whites in the refrigerator (we will need them later). Stir. Gradually add flour, adding a pinch of salt and soda. We start mixing the dough in the pan first.

    Dust the table with flour and mix the dough until it reaches the consistency of elastic plasticine.

    Wrap in cling film and refrigerate for 1.5 hours.

    Preheat the oven to 180 degrees. Roll out the cold dough into thin layers. Cut out figures using shapes or cardboard templates.

    Bake for 5-7 minutes.

    Let's start preparing the sugar glaze (icing). Add sifted powdered sugar to the cooled whites. Do not beat, just mix with a spoon. At the end, add 0.5 teaspoon of lemon juice. Let sit for half an hour. Then put it in a tight bag, make a tiny hole at the tip and start painting the cooled gingerbread cookies.
