I only found dill and parsley. If the greens have an active flavor, use smaller amounts. Choose high-quality cottage cheese, without additives; the fattier it is, the tastier the flatbreads will be.

    Prepare the dough. How to make the dough? Take a bowl, pour flour into it. Add salt, oil and water, knead the dough. I first stir in a bowl with a spoon, then continue on the table. You may need different amounts of flour, check the condition of the dough.

    Now let the dough rest for at least twenty minutes. During this time, the flour will absorb all the water and form gluten, which will make the dough easy to work with. Place the dough in a bowl, sprinkle with flour and cover with a towel. You can also wrap it in film and leave it right on the table.

    While the dough is resting, prepare the filling. How to make the filling? Place the cottage cheese in a bowl and mash with a masher.

    Wash the greens well, dry and finely chop.

    Add herbs, soda and salt to the cottage cheese, stir. The filling is ready.

These “curd cheese miracles” got me very interested in their interesting name. I kneaded a stiff dough. After lying on the table in a bag, it became much softer. I tried to roll it out very thinly. Due to the fact that vegetable oil was added to the dough, it turned out to be elastic, did not tear, and stretched well. For the filling, I mixed cottage cheese with feta cheese, after kneading it with a spoon, it turned out to be such a plastic mass that it was convenient to apply it and spread it over the dough with a silicone spatula. I didn’t add soda to the filling; I didn’t really understand its function, but the taste was excellent even without it. I baked it in a very hot dry frying pan (with the lid closed). I liked this cooking method - fry without oil, but then brush the hot tortillas with butter. After cooling, the cakes became soft, thin and, of course, very tasty! My husband and son especially liked them; they are lovers of such baked goods. So thank you for the recipe, I will definitely make such miracles again!
