STEP 1

How to make a miracle with cottage cheese? Prepare your food. Sift the flour first. Let there be a lot of greenery, you can take any of it: cilantro, spinach, sorrel, nettle, whatever you find. I only found dill and parsley. If the greens have an active flavor, use smaller amounts. Choose high-quality cottage cheese, without additives; the fattier it is, the tastier the flatbreads will be.
STEP 2

Prepare the dough. How to make the dough? Take a bowl, pour flour into it. Add salt, oil and water, knead the dough. I first stir in a bowl with a spoon, then continue on the table. You may need different amounts of flour, check the condition of the dough.
STEP 3

Knead the dough until homogeneous and smooth; I also like to beat it on the table.
STEP 4

Now let the dough rest for at least twenty minutes. During this time, the flour will absorb all the water and form gluten, which will make the dough easy to work with. Place the dough in a bowl, sprinkle with flour and cover with a towel. You can also wrap it in film and leave it right on the table.
STEP 5

While the dough is resting, prepare the filling. How to make the filling? Place the cottage cheese in a bowl and mash with a masher.
STEP 6

Wash the greens well, dry and finely chop.
STEP 7

Add herbs, soda and salt to the cottage cheese, stir. The filling is ready.
STEP 8

Meanwhile, the dough is also ready to work. Divide it into balls the size of a table tennis ball.
STEP 9

Roll each ball with a rolling pin into a circle 2-3 mm thick. I roll out on a board dusted with flour; instead of flour, you can grease the surface with a small amount of vegetable oil.
STEP 10

Place a dessert spoon of filling on one half of the dough, smooth it into a thin layer, leaving a centimeter from the edge.
STEP 11

Cover with the other half of the dough. Crimp the edges with a fork as shown in the photo.
STEP 12

I advise you to make blanks from all the dough before baking our miracles.
STEP 13

Heat the frying pan well over medium heat. Place two cakes at a time in a dry frying pan, without oil!!!
STEP 14

When one side begins to brown, turn it over to the other. The miracles are fried quickly, two minutes on each side will be enough.
STEP 15

Place the still hot flatbreads on a plate and generously grease them with butter. Serve immediately, hot and buttery. Bon appetit!
