    How to make hedgehogs from minced meat in sour cream? I usually use raw rice for minced meat, since in this form, when cooked, it holds the minced meat together well and prevents the meatballs from falling apart. Soak the rice for 10 minutes in cold water, then rinse and drain.

    While the rice is soaking, prepare the minced meat. To do this, cut the pork flesh into small pieces and grind in a blender to the desired consistency. The minced meat should be homogeneous.

    Peel the onion, finely chop and fry in vegetable oil in a frying pan. You can add a pinch of salt to the onion to release the juice.

    When the onion becomes transparent, add carrots, previously peeled and grated on a coarse grater. Fry everything for 7 minutes over medium heat until half cooked, stirring regularly to prevent the vegetables from burning. Turn off the heat and let the roast cool slightly.

    In a deep bowl, mix the chopped meat, roast and rice, add salt, garlic, pressed through a press, ground black pepper, beat in the egg. You can also add your favorite seasonings to taste. Mix everything with your hands until smooth. The minced meat is ready.

    With wet hands, scoop out a good amount of minced meat and form into round hedgehog meatballs. From the specified amount of products you will get 11 small meatballs. So use all the minced meat.

    Place the meatballs in a single layer in a wide-bottomed pan. They need to be stacked in one tier. I cooked in two steps, since my pan is small and all the ingredients did not fit at once. Pour in cold water so that it covers the hedgehogs halfway. Add salt to taste and bay leaf. Place over medium heat, bring to a boil and simmer over low heat for 30 minutes with the lid closed. Water (hot) can be added.

    While the meatballs are stewing, prepare the sour cream sauce. To do this, in a small deep plate, mix sour cream, tomato paste, salt, chopped garlic, nutmeg and flour.

    After 30 minutes, remove the bay leaf and add sour cream sauce to the pan, pouring it evenly over the meatballs. Simmer for another 30 minutes until tender over low heat. During this time, you need to control the liquid so that it does not boil away, adding hot water if necessary. Hedgehogs in sour cream are ready!

I liked the recipe because minced hedgehogs in sour cream are cooked without frying, which makes the dish less high in calories. The only thing is that the onions and carrots are still fried before they get into the minced meat. The hedgehogs simmer in a covered pan in water with the addition of bay leaves, then in sour cream sauce. I also liked that rice is added to the minced meat without first boiling, which simplifies cooking and saves time. The result was excellent! Good afternoon A couple of questions: I didn’t see carrots in the ingredients and about garlic: it says 5 cloves, but in the note - 4 for the minced meat and 3 for the sauce =)
