Mix everything, add salt and pepper if necessary, add eggs and ketchup or tomato sauce. Stir again.

    Rinse the rice in several waters until transparent, pour it into a saucepan, cover with water and boil until half cooked - this is about 7-10 minutes after boiling. Place the rice in a colander and let cool, then add it to the minced meat and mix everything.

    Form the minced meat into balls of the same size and place on a baking sheet.

    For the dressing, mix sour cream, 3-4 tablespoons of mayonnaise and the same amount of ketchup; if it turns out too thick, add water or broth. Pour the resulting sauce over the hedgehogs until 2/3 of the surface is covered.

I made minced hedgehogs in sauce for lunch. It turned out very tasty! I had homemade minced pork. I prepared it by grinding the meat along with onions in a blender. I added boiled rice, a teaspoon of tomato paste, a grated clove of garlic, and salt to the meat. I did not add an egg to the minced meat, since the rice makes the minced meat quite viscous, as a result of which the hedgehogs hold their shape well and do not fall apart. Having combined all the ingredients, I thoroughly mixed the minced meat, formed the hedgehogs and put them in a baking dish. Topped it with a sauce made from sour cream, mayonnaise and tomato paste. I added a little water to the sauce so that it was not too thick. I baked the hedgehogs in the oven for 40 minutes at 220°. It turned out great! The hedgehogs turned out soft and fragrant! Sour cream and tomato paste in the sauce gave a pleasant sourness, which greatly “decorated” the hedgehogs. Thank you very much!
