    How to make a quick and juicy Turkish omelette Menemen? Very simple! First, prepare the necessary ingredients to taste. If you don’t have a large tomato, you can replace it with 2 small ones. You can use any vegetable oil. I have sunflower. You can take 1 tsp. vegetable and butter.

    Wash the bell pepper and dry it. Remove seeds and stem. Cut the pulp into strips. To make the dish more beautiful, I used green bell peppers. You can take pepper of any color. In Turkey, instead of bell pepper for omelettes, they use a different variety: the pods are oblong, like Ramiro pepper, but dark green. The pepper is not as hot as chili, but not quite sweet either. I've never seen peppers like this in our stores. Therefore, I replaced it with a more affordable one.

    Pour boiling water over the tomato and remove the skin. How to easily peel tomatoes? Wash them and make cross cuts on top with a sharp knife. Place in boiling water for 1-2 minutes. Remove, cool slightly and remove the skin. Cut the tomato in half and remove the seeds. Cut the pulp into small cubes.

    Wash the parsley, dry and finely chop. If you wish, you can replace or supplement with other herbs, for example, dill, cilantro, or use a mixture of different herbs.

    Heat vegetable oil in a frying pan over high heat. Add green peppers and stir-fry for 2 minutes.

    Add chopped tomatoes. Fry with constant stirring for another 2 minutes. At the end, add salt and pepper.

    Break the eggs into the pan and quickly assemble the omelet with a spatula from the edges to the center.

    Fry everything together for 1-2 minutes until the eggs are set and excess liquid has evaporated.

The unusual name interested me. I decided to make menemen Turkish omelette using this recipe. I really liked the simple preparation. And the taste is simply stunning! I decided to make 2 servings at once, doubling the ingredients, the menemen looks too appetizing in the photo and the description is tempting) I took fresh ingredients from the list. I washed and cut the vegetables. I fried the vegetables as described in the recipe. The only spices I used were salt and pepper. Beat in the eggs and stir. Let it simmer a little and add fresh parsley. The aroma is amazing! The vegetable omelet turned out to be very tender and juicy, thanks to the vegetables. The combination is wonderful. Stewed tomatoes and peppers are delicious with fried eggs. I divided the dish into two servings. Breakfast was a success! And beautiful, and satisfying, and unusual, and fragrant! Well, very tasty!
