Lenten roll with poppy seeds

STEP 1
How to bake a lean roll with poppy seed filling? Measure out the required ingredients for the test. Take refined vegetable oil. Warm the water slightly.
STEP 2
Sift the flour to enrich it with oxygen. This will help the dough rise fully and the baked goods will turn out fluffy.
STEP 3
In a small bowl, combine the yeast, 1 tsp. sugar and about 50 ml of warm water. Mix everything well until smooth. Leave the yeast to activate for 10-12 minutes. The mixture will rise noticeably and a lush foamy “cap” will appear on the surface.
STEP 4
To prepare the dough, take a large, tall bowl. Dissolve salt, sugar and vanilla sugar in the remaining warm water and mix.

Pour in vegetable oil, stir.
STEP 6
Add activated yeast and stir again.
STEP 7
Add sifted flour. Do not pour out all the flour at once, as you may need less. Mix the dough with a spoon. It is still too viscous and sticky.
STEP 8
Add the rest of the flour in small portions, while mixing the dough with your hands. Focus on the consistency of the dough when kneading.
STEP 9
The dough turns out tender, soft, and does not stick to your hands. Place the dough in a bowl, cover with a towel and leave in a warm place to rise for 70-90 minutes. Rising time will depend on temperature, yeast activity, and dough density.
STEP 10
While the dough is rising, prepare the poppy seed filling. Instead of honey, you can use sugar to taste. You can also add nuts or other dried fruits to the filling.
STEP 11
Steam the raisins. How to steam raisins correctly? Pour hot water over the well-washed raisins and leave for 10-15 minutes. During this time it will become soft and the filling will be juicier. Drain and dry the raisins with paper towels.
STEP 12
Pour the poppy seeds into a small saucepan and add water at the rate of two parts water for one part poppy seed. Bring to a boil. Boil the poppy seeds over moderate heat for 10-15 minutes.
STEP 13
Turn off the heat and let the poppy seeds sit with the lid closed for another 10 minutes.
STEP 14
Place the poppy seed on cheesecloth folded in several layers to drain off excess water.
STEP 15
Combine poppy seeds and dried raisins. They need to be crushed.
STEP 16
You can do this in a mortar or blender. I used an immersion blender. After grinding, the filling will become more uniform.
STEP 17
Add honey (or sugar) and lemon zest to the filling. Mix well.
STEP 18
The dough has risen, having increased in volume by 2-2.5 times.
STEP 19
Gently knead the dough and place it on a table sprinkled with flour. Roll out the dough into a rectangular layer 0.5-0.7 cm thick.
STEP 20
Place the poppy seed filling on the dough and smooth it out. At the same time, leave the edges of the dough about 0.5-1 cm free so that when you roll the roll, the filling does not spill out.

Roll the roll so that the seam is at the bottom.
STEP 22
Carefully transfer the roll to a parchment-lined baking sheet, cover with a towel or cling film and leave to proof for 15 minutes. You can grease the top of the roll with sweet water or sweet tea leaves.
STEP 23
Bake the lean roll with poppy seeds in an oven preheated to 180 C for 30-35 minutes until golden brown. Determine the baking time and mode based on the operating characteristics of your oven.
STEP 24
