STEP 1
How to bake a poppy seed yeast roll? Prepare all the necessary ingredients. Today I will make a roll with fresh yeast, but you can also use dry yeast. Then you will need 11 grams of them.

How to make poppy seed filling for yeast roll? Of course, you can buy a ready-made one in the store, but it is not cheap, and making it is not that difficult. If only I had a poppy and time. I didn’t have much poppy seed, but if you are a fan of poppy seed baked goods, you can safely increase the quantity by 1.5-2 times. Pour the poppy seed into a pan and pour 300 ml of water. Place the pan over medium heat and bring to a boil. Simmer over low heat for 15 minutes.
STEP 3
Then drain the water and place the poppy seeds in a sieve lined with gauze or paper napkin. Let the water drain completely and transfer the poppy seeds to the blender bowl. Add sugar and grind the poppy seeds with a blender into a finer mass.
STEP 4
Place the crushed poppy seeds back into the pan and add the milk and butter.
STEP 5
Place over low heat, bring to a boil and cook, stirring, until the liquid evaporates and thickens. Remove from heat and let the mixture cool. The filling is ready.

How to make yeast dough for poppy seed roll? Heat the milk a little, but not too much, since at temperatures above 40 degrees, the yeast dies. Pour 100 ml of milk into a bowl, add yeast and sugar. Mix everything until smooth and place in a warm place for 10 minutes. If the yeast is good, a cap of bubbles will appear on the surface. If this does not happen, then you need to use other yeast; the dough will not work with this one.
STEP 7
Melt the butter in a water bath or in the microwave and cool. Beat the egg into the bowl and stir until smooth. Add everything to the bowl with the yeast dough, stir.
STEP 8
Pour in the remaining milk, add sugar, salt and half the flour. Be sure to sift the flour through a sieve, this will make the baked goods more airy. Mix everything until smooth. The dough should be like pancakes. Cover the bowl with a clean towel and place in a warm place for 30 minutes.
STEP 9
Add the remaining flour and knead into a soft dough. Cover with a towel and place in a warm place for 1-1.5 hours to rise. You may need a little less or more flour, this will depend on its properties, focus on the consistency of the dough.
STEP 10
Knead the risen dough and roll it out onto a floured table into a thin layer.
STEP 11
Spread the poppy seed filling over the entire surface of the dough in an even layer.
STEP 12
Roll the poppy seed layer into a tight roll.
STEP 13
Line a baking tray with baking paper and place the roll on it, seam side down. Mix the egg yolk and brush the entire surface of the roll. It is convenient to do this with a silicone spatula. Place the baking sheet in a warm place for 20 minutes to allow the roll to rise. Turn on the oven to preheat to 180 degrees.
STEP 14
Place the baking sheet with the suitable roll in the hot oven, bake for about 30-40 minutes until cooked and golden brown. The times are approximate, be guided by the operating characteristics of your oven.
STEP 15
Remove our poppy seed roll from the oven, cover it with a towel and let it cool completely. Then cut the poppy seed roll from the yeast dough and serve.
STEP 16
A tasty and fluffy poppy seed roll is good served with hot, aromatic tea, coffee or cocoa. I really like it with milk. Bon appetit!
