Good afternoon! Oatmeal cookies 🍪 have always been popular in our family. It is healthy, aromatic and very tasty. And given the fact that children do not always eat oatmeal, oatmeal cookies are a kind of porridge replacement, a healthy snack. Today I decided to try baking plain oatmeal cookies, as an alternative, I usually bake with kefir. First I made the syrup, did not add nutmeg, it has a peculiar burning taste - not for everyone, but added cinnamon. When soda is added, a violent neutralization reaction occurs and a lot of foam is formed, because... honey has an acidic environment, and soda is alkaline, due to this the cookies should turn out crumbly. I have ordinary Altai oat flakes by weight (not instant), so I ground them in a coffee grinder, maybe for this reason I only got half a glass of flour in, not I started trying to mix in all the flour, I thought it would be a bit harsh.... For the given amount of ingredients I added 40 g of walnut kernels, which I did not grind too much so that the taste of the nuts could be clearly felt. The dough turned out elastic and did not stick to your hands. I divided it into equal portions with a spoon, rolled it into balls and formed cookies... The cookies turned out to be a beautiful brownish-golden color, with appetizing cracks, aromatic (honey and cinnamon go well together), the nuts are crunchy. Moderately sweet. Very tasty! Next time I will definitely bake a double portion. From this quantity I got 8 pieces. But I added less flour than indicated. Thanks to the author for the excellent recipe!!!
