STEP 1

How to make lazy cheesecake with cottage cheese? Very fast! To begin, prepare the necessary ingredients according to the list. Start with the dough. Use premium flour. Large, selected eggs are needed. If the eggs are small, take 5 pieces. You can adjust the amount of sugar to your taste.
STEP 2

Beat the eggs with sugar into a fluffy, light foam. The mass should increase in volume by 3-4 times and lighten.
STEP 3

Add sour cream at room temperature and beat again. It is better to take sour cream with a fat content of 15% or higher.
STEP 4

Add the sifted flour and baking powder and salt and beat the mixture again until smooth. Don't rush to add all the flour at once, as you may need more or less.
STEP 5

Focus on the consistency of the dough. It should be thick, but fluid.
STEP 6

Now prepare the necessary ingredients for the filling. It is better to take cottage cheese with a fat content of 5% or higher. The cottage cheese should not be dry or lumpy. The fattier the cottage cheese, the tastier the filling will be. I used cottage cheese in briquettes. There is no need to knead it additionally or rub it through a sieve. You can replace vanilla sugar with a pinch of vanillin.
STEP 7

Finely chop the candied fruits with a knife. I have an assortment of candied fruits. If you wish, you can omit them at all.
STEP 8

Place cottage cheese, egg, sugar and vanilla sugar in a bowl. Using a mixer, beat the mixture until smooth. If your cottage cheese is dryish, with hard grains, it is better to beat everything in a stationary blender instead of a mixer.
STEP 9

Stir candied fruits into the curd mass. The curd filling should be non-flowing, with a denser consistency than the dough.
STEP 10

Cover a mold with a diameter of 22-24 cm with parchment and grease with oil. Pour the dough into the mold and smooth it out. Carefully place the curd filling in the center. Place the pie in an oven preheated to 180°C for 55-60 minutes. Bon appetit!
