STEP 1
How to make a lavash roll with tomatoes and cheese? Prepare all the necessary ingredients for the filling. It is better to use soft processed cheese in boxes - it is easier to spread on pita bread. In addition to dill and parsley, you can also add green onions, cilantro or other greens. You can replace the greens with the leaves of any green salad (such as Iceberg, Frillis).
STEP 2
Wash the tomatoes, dry them and cut them in half. To prevent the moisture from the tomatoes from soaking the entire pita bread, it is better to cut out the center with the seeds. Cut the pulp into small cubes. It is better not to cut the tomatoes coarsely, as they can tear it when rolling the roll. For the filling, choose fleshy tomatoes, which have more pulp and less juice.
STEP 3
Grate the cheese on a medium or fine grater. You can use any cheese, as long as it is fresh and without the use of vegetable fats. Read about how to replace different types of cheeses in a separate article at the end of this recipe.
STEP 4
Wash the dill and parsley in running water, dry with paper towels and finely chop.
STEP 5
Spread a sheet of lavash on the work surface and evenly grease it with processed cheese. For piquancy, you can add garlic cloves (1-2 cloves) passed through a press to the processed cheese and mix. And only then spread it on the pita bread.
STEP 6
Conventionally divide the pita bread into three equal parts. Sprinkle a third of the pita bread with tomato slices. Sprinkle the second third of the pita bread with grated cheese. Sprinkle the last third with chopped herbs. You can not sprinkle everything separately, but mix all the filling in a bowl and sprinkle it evenly over the entire pita bread.
STEP 7
Roll the pita bread into a tight roll, starting from the side with tomatoes, so that all the tomatoes remain in the center of the roll. In this case, the tomatoes will not be able to soak the entire pita bread, only if it is the very middle.
STEP 8
Wrap the resulting roll in cling film or a plastic bag and place it in the refrigerator for 1-2 hours to soak.
STEP 9
Free the chilled lavash roll stuffed with cheese and tomatoes from the film, cut into portions and serve. If desired, you can bake the roll in the microwave or oven for a few minutes. Then the cheese will melt and the roll can be served hot. It will taste similar to vegetable shawarma without the chicken. Bon appetit!
