Cooking kutabs with herbs and cheese was my first experience. For the first time I kneaded dough in boiling water. I poured flour into it, to which I had previously added vegetable oil and salt, and quickly mixed everything with a spoon, from which the flour instantly turned into a soft, steep mass. Next, I kneaded the dough with my hands. Very unusual sensations! The dough is hot in your hands, not scalding, but quite pleasant. While the finished dough was resting, I started preparing the filling - grated cheese, chopped green onions, dill and parsley. I didn’t mix the cheese and herbs. I first laid the cheese on the rolled out dough flatbreads, and then the greens on it. The filling was placed on one half of the flatbreads. She covered it with the other half, pinched the edge of the kutab and sent it to a heated dry frying pan. I kept it there until the dough browned. I greased the finished kutabs with butter, which made them soft and tender. The greens inside the kutabs remained just as fresh and crispy, and the cheese melted. It turned out wonderful!
