Kutaby
Choose interesting, tested kutab recipes on the online service bestrecipes24.com. Try variations with all kinds of greens, various meat products, mushrooms, potatoes, onions and all sorts of vegetables, cottage cheese, pickled and hard cheeses. Add color to the dish with aromatic spices.
There are two mandatory features in preparing kutab: first, the dough must be unleavened.
Interesting recipe: 1. Add salt and oil to boiling water.2. Pour the hot oil mixture into the flour and knead into a light, non-stick dough.3. Let the dough stand for a quarter of an hour.4. Finely chop the greens, add grated cheese. Salt as needed to taste. Pepper.5. Divide the dough into 7-8 parts.6. Roll out into thin rounded layers.7. Place filling on half the circle and cover with the other. Carefully pinch the edges.8. Fry on both sides in a “dry” frying pan.
Helpful tips: • Prepared kutabs should be properly greased with butter. Serve hot.• If the unleavened dough is slightly dry and the edges are not pinched, then you need to moisten the joints with water or a beaten egg.• If the number of pies is more than necessary, you can always freeze them. Kutabs are placed in the freezer raw, already formed.
