Azerbaijani kutabs with greens
Ingredients
Step-by-step preparation
STEP 1
How to make kutabs with herbs in Azerbaijani style? Very simple and fast. Prepare the necessary ingredients. It's better to start by preparing the dough. Take the highest grade flour. Any vegetable oil will do. I have aromatic unrefined sunflower.
STEP 2
Sift the flour into a bowl, this will saturate it with oxygen and the dough will be more tender. Add salt and stir. Make a well in the flour. Pour hot water and vegetable oil into the flour in a thin stream. Quickly knead into a soft, fluffy, elastic, homogeneous dough, adding more flour if necessary.
STEP 3
Please note that you may need more or less flour. But don't rush to flour the whole dough trying to get rid of stickiness. Otherwise, the dough will become rubbery and unyielding. It is better to sprinkle the table and rolling pin with flour when rolling. The dough itself will take as much as it needs.
STEP 4
Roll the dough into a ball, wrap in cling film or a bag and leave to rest and cool for 10-15 minutes. You can also knead the dough in water at room temperature. I did this and that. Cold water makes the dough softer and more elastic. For more information about flour, read the article below the steps.
STEP 5
Meanwhile, prepare the filling. Select a set of greens to your liking. I have dill, cilantro and parsley. Options with green onions, basil, wild garlic, etc. are also possible.
STEP 6
Wash all greens and dry. Place the greens in a blender and grind into a paste. If you don’t have a blender, you can chop the greens very finely with a knife.
STEP 7
Crumble the cheese with your hands. You can use any cheese: Adyghe, Caucasian, feta cheese, feta, etc.). Read about different types of cheeses in the article at the end of this recipe under the steps.
STEP 8
In a bowl, combine chopped herbs and cheese and stir. Taste the cheese first. If it is salty enough, you don't have to add spices. If the taste is neutral, then you can add additional salt and pepper to the filling.
STEP 9
Divide the dough into 6-8 equal parts. Roll each part into a thin circle. Place 2-3 tbsp on one side of the circle. l. filling and smooth out.
STEP 10
Cover with the second part of the dough. Pinch the edges.
STEP 11
Fry the pieces in a dry frying pan over medium heat on both sides until golden spots appear. Read articles on these topics for how to choose a frying pan. Link at the end of the recipe.
STEP 12
Grease the finished hot kutabs with herbs and cheese with butter and serve immediately hot. Bon appetit!
