Qutab with cheese

Azerbaijani flatbreads made from unleavened dough with filling. A very simple dish, not difficult to prepare. In a dry frying pan, kutabs are baked like flat cakes and do not stick. They can also be fried in vegetable oil, like pasties. The version with cheese can be varied by adding different types of greens, as well as mixing different types of cheese. Kutaby can be served with yogurt, sour cream, vegetable salad, as well as tea and even beer.

    To prepare kutab with cheese, take the required amount of flour, water, vegetable oil, salt according to the list and for the filling of hard cheese and dried herbs.

    First, knead the unleavened dough: combine 2 cups of flour with a glass of water, add vegetable oil, a pinch of salt and mix.

    Then knead the dough with your hands, gradually adding the remaining flour.

    Form a ball from the dough, leave it for ten minutes and prepare the filling.

    For the filling, grate hard cheese on a coarse grater.

    Cut the dough into equal sized pieces, there are 16 of them in this recipe.

    Sprinkle the worktop with flour to prevent the dough from sticking while rolling.

    Roll out each piece of dough thinly on the countertop with a rolling pin.

    Place grated cheese on one half of the rolled out flatbread and sprinkle with dried herbs (optional).

    We bend the flatbread in the middle, covering the filling with the free side.

    If the edges of the cake are uneven, cut off the excess dough and press the edges with your fingers.

    Then we fasten the edges of the kutab, pressing them with a fork, as shown in the photo.

    Using a fork, pierce the kutab in several places to allow air to escape during frying.

    Place the formed products in a hot, dry frying pan without fat and bake over low heat for 2-3 minutes on one side until they are slightly browned.
