    Mix all the ingredients in a bowl until smooth and place it in a warm place to activate the yeast for fifteen minutes.

    After the time has passed, take a fine sieve and sift three hundred grams of premium wheat flour in parts into a bowl with activated yeast and add one teaspoon of salt to the bowl.

    Bring the dough together in the bowl with your hands, then add two tablespoons of vegetable oil to the bowl.

    To prepare the filling, place in a deep bowl and mash two hundred grams of Adyghe cheese in it, then take a large grater and grate one hundred and eighty grams of mozzarella cheese into the bowl with Adyghe cheese and mix the cheeses together.

    Break one chicken egg into a bowl with cheese, then add one hundred and fifty to two hundred milliliters of warm boiled water to it and mix all the ingredients well in the bowl until smooth.

    Place each dough ball one at a time on a table sprinkled with a small amount of flour and roll out to flat cakes two millimeters thick.

    Mix the prepared filling well in the bowl one more time and place one tablespoon of it on each opposite edge of the tortilla.

I made it for the first time and was pleased with the dough according to the author’s recipe. The dough rose well, it turned out soft and airy. I’ll be honest, I don’t always get a successful yeast dough. With this recipe, everything worked out. The filling is above all praise - tender, juicy, aromatic. It's not specified in the recipe, but I added dill to the filling at my discretion. Egg and butter add a certain charm. I repeat that this was the first time I made it, but not the last. Therefore, I will continue to train my skills in preparing khachapuri. Thanks to the author for the recipe!
