STEP 1

How to make khachapuri PP in a frying pan? Prepare your food. Take soft cottage cheese, from a pack - then the dough will be more homogeneous and tender. Besides rice flour, any other flour will do. Also cheese - take any, the main thing is that it melts well and is tasty.
STEP 2

Place the cottage cheese in a bowl. Divide the egg into white and yolk. Try to do this very carefully so that the yolk remains intact. Add the white to the cottage cheese, set the yolk aside for now.
STEP 3

Add salt and mix the cottage cheese with the egg with a fork.
STEP 4

Add flour, baking powder and knead the dough. Do not add all the flour at once; rely on the consistency of the dough as you knead. It should stop sticking to your hands, but remain soft. You may need more or less flour than the amount stated in the recipe.
STEP 5

Place the dough on the board and form a boat using a spoon. Make it thin as the dough will rise during baking.
STEP 6

Heat a non-stick frying pan over high heat. Place the boat blank on it. Turn the heat to low and cover the pan with a lid. Fry the boat for 4-5 minutes until golden brown.
STEP 7

Turn the boat over so the brown side is facing up. Press down with a spatula as the dough rises. Sprinkle the dough with cheese grated on a medium grater. Cover the pan with a lid and fry the khachapuri for another 3 minutes on the lowest heat.
STEP 8

During this time the cheese will completely melt. Make a round hole in the center with a spoon and pour the yolk into it. Cover the frying pan with a lid again and cook the khachapuri for another 1-2 minutes - the yolk should tighten slightly on top, but remain liquid inside.
STEP 9

Serve khachapuri hot. Bon appetit!
