    How to make a delicious kefir pie with semolina in the oven? Very simple! To begin, prepare the necessary ingredients according to the list. You can add nothing at all to the manna or add berries and dried fruits. I decided to add apples stewed in sugar syrup. It turned out very tasty and aromatic!

    Peel the apples from seeds (and, if desired, peel) and cut into medium slices.

    Place chopped apples, sugar, and lemon juice into a saucepan.

    Place the saucepan on the stove. Stirring gently, simmer over medium heat for 5-10 minutes. The exact stewing time depends on the variety and cut of fruit. The apples should retain their shape. They shouldn't boil down to mush! This is an important point, so don’t go far from the stove. Stewed apples can be replaced with fresh ones.

    Now prepare the ingredients for the dough. Take the highest grade flour. A lot depends on the quality of the semolina. The grain must be clean and of the highest quality. I prepared manna with different grains. And the most delicious and porous ones are obtained with yellow grains. It is a little larger, more textured than white. Large, selected eggs are needed. Kefir should be at room temperature, so remove it from the refrigerator in advance. Adjust the amount of sugar to your taste.

    Pour semolina with kefir at room temperature. Mix thoroughly, breaking up any lumps, and leave to swell for 40 minutes.

    Beat eggs with sugar until fluffy. The mass should increase in volume by 2-3 times.

    Add soft butter at room temperature to the beaten eggs and beat again. If you want to reduce the calorie content of the pie, you can add less butter, for example 50-60 g.

    Add swollen semolina, baking powder and salt. Beat everything again until smooth. No flour is needed in this dough. But if the dough turns out to be too liquid, you can add 1-2 tbsp. l. without a heap of sifted flour. It will take away excess moisture.

    Place the stewed apples into the dough and gently stir the dough with a spatula. Depending on the thickness of your dough, you may or may not add syrup from the stewed apples. I added just a little bit so that the dough wouldn't liquefy too much and all the apples wouldn't sink to the bottom.

    Transfer the dough into a baking dish (Ø 18-20 cm) greased with vegetable oil and smooth it out. If you have a silicone mold, you don’t need to grease it with anything. I treated my relatives to a kefir pie with semolina in the oven. I needed to prepare something for tea quickly, and manna was just the right option. Of course, you need the semolina to infuse with kefir. If you do this in advance, the preparation will not take much time. By the way, I once tried to save time and did not leave the semolina to swell, this is a bad idea) The longer the cereal is in contact with the liquid part of the dough, the more tender and fluffy the pie will turn out. I added two tablespoons of flour to the dough to make it thicker. I also decided to stew the apples for the manna with sugar and lemon juice. The main thing here is not to forget to stir the apple slices so that they do not lose their shape. The cake was baked for 40 minutes at 180° until the toothpick was dry. It turned out so fluffy, tasty, sweet and fragrant! I just managed to photograph a piece) The recipe is excellent, I recommend it!
