  1. STEP 1

    STEP 1

How to make a kefir pie with berries? Prepare your ingredients. Take white, premium flour. Kefir - any fat content. Berries - also any, of your choice. I have black and red currants. Both fresh and frozen are suitable. Wash the eggs and dry with napkins.

  2. STEP 2

    STEP 2

Wash the berries, sort and dry. The berries should be strong, not very watery, so that the dough around them is well baked.

  3. STEP 3

    STEP 3

Combine the eggs in a separate bowl with sugar and beat with a mixer until fluffy and fluffy. Wash the eggs first to remove dirt. Continuing to beat, pour in the kefir.

  4. STEP 4

    STEP 4

Sift the wheat flour separately through a fine sieve. Please note that you may need more or less flour than I did. Focus on the consistency of the dough and add flour in parts. Read about the properties of flour in the link at the end of the recipe.

  5. STEP 5

    STEP 5

Gradually add flour to the eggs beaten with kefir. The consistency of the dough should be like thick sour cream. The stains left by the whisk will heal slowly.

  6. STEP 6

    STEP 6

Add vanilla sugar and baking powder to the dough. Beat it again until smooth. Read all the intricacies of using baking powder in baking in the article on this topic. Link at the end of this recipe.

  7. STEP 7

    STEP 7

Pour the berries into the dough and gently mix it with a spatula, trying to keep the berries intact.

  8. STEP 8

    STEP 8

Turn on the oven in advance (10-20 minutes), setting the temperature to 180 degrees. Line a baking pan with parchment and grease it with vegetable oil. Pour the dough into the mold. Bake the pie for about 30-45 minutes at 180°C. Time and temperature are approximate, be guided by the characteristics of your equipment. Read more about how ovens work in the article at the end of the recipe.

  9. STEP 9

    STEP 9

Remove the finished pie from the mold, cool and cut into pieces. Serve with tea, coffee, milk, cocoa or chicory. Bon appetit!

I wanted to bake something with summer berries for tea. The choice fell on kefir pie with berries. I collected yoshta berries (a hybrid of currants and gooseberries) for a pie. I turned on the oven and made the dough. Instead of baking powder, I added a teaspoon of soda slaked with fruit vinegar. The result was a lush, porous, ruddy and very tasty pie! An excellent option for visiting guests. I will bake it again! Everyone liked it so much that there wasn’t even a crumb left.

The whole family loved the pie! I also liked the fact that there are a minimum of ingredients, the dough is kneaded instantly and bakes quickly. Everything is perfect) I didn’t have any red currants, but I had plenty of black currants, picked straight from the bush) I generally like it better when there are fresh black currants in the pie, they have such a pleasant taste and consistency. Instead of kefir, I have fatty homemade yogurt. The cake turned out very airy, porous, and beautiful. The taste is great! I will make this wonderful fluffy berry pie more often)
