STEP 1

Grate 2 medium carrots.
STEP 2

Grate 2 medium green apples. Add lemon juice to prevent the apples from darkening.
STEP 3

Using a plastic knife, cut 4 medium kale leaves. Kale is a true superfood. It contains 9 out of 10 essential amino acids, more calcium than milk, and the amount of vitamin A in one glass of this cabbage is 2 times the norm.
STEP 4

We are preparing the dressing. Heat the walnuts in a dry frying pan. Very quickly, stirring constantly. This is necessary to reveal their aroma.
STEP 5

We transfer them to a mortar. I use a Japanese mortar - it is called suribachi and its uniqueness is in such internal grooves, which significantly speed up and facilitate the process. There is no need to grind too much, let the pieces remain for a variety of texture. Combine with cold-pressed vegetable oil (olive or grape seed) - a tablespoon and a teaspoon of balsamic vinegar. Mix everything well.
STEP 6

Add our dressing to the salad. Add Himalayan salt and pepper and mix everything well. This salad always surprises everyone who tries it for the first time! How can such a delicious dish be made from such simple ingredients! Garnish with cilantro sprigs and sesame seeds.
