  1. STEP 1

    STEP 1

How to make julienne with shrimp? Prepare all the necessary ingredients for julienne. You can use any shrimp: regular, king or even larger - Argentinean. Both refined and unrefined. The net weight of the shrimp should be at least 200 g. Therefore, if you take unpeeled frozen shrimp with the head on, then you need to take about 1.5-2 times more.

  2. STEP 2

    STEP 2

Thaw the shrimp, cover with boiling water and leave for 5 minutes.

  3. STEP 3

    STEP 3

Then remove the head and shell from the shrimp.

  4. STEP 4

    STEP 4

Grate the cheese on a coarse grater.

  5. STEP 5

    STEP 5

Wash the champignons, dry them and cut them into slices. If the champignons are small, you can either leave them whole or cut them in half. You can replace the champignons with other mushrooms, for example, honey mushrooms, chanterelles. Mushrooms can be fresh or frozen.

  6. STEP 6

    STEP 6

Heat vegetable oil in a frying pan, add mushrooms and fry until golden brown. Transfer the mushrooms to a plate.

  7. STEP 7

    STEP 7

Prepare the necessary ingredients for Bechamel sauce. The cream should be at room temperature, so remove it from the refrigerator in advance. You can use cream with a fat content of 10 to 20%.

  8. STEP 8

    STEP 8

Pour flour into a dry frying pan and fry over medium heat, stirring, until golden brown. At first, the flour will not change color, but then it begins to darken quickly, so it is important not to leave the frying pan unattended and try not to miss the right moment, otherwise the flour may burn. When a light smoke begins to rise above the frying pan, it means that the flour will soon begin to acquire a golden color.

  9. STEP 9

    STEP 9

Add the butter and fry for about 2 minutes, stirring constantly.

  10. STEP 10

    STEP 10

Continuing to stir and breaking up any lumps, pour in the cream at room temperature. While constantly stirring, bring the sauce to a boil and remove from heat. If you still cannot get rid of lumps, simply rub the sauce through a sieve.

  11. STEP 11

    STEP 11

Place the fried mushrooms in the pan with the sauce. Salt and pepper.

  12. STEP 12

    STEP 12

    Mix mushrooms with sauce.

  13. STEP 13

    STEP 13

Place the prepared shrimp in cocotte makers or small ceramic baking pots.

  14. STEP 14

    STEP 14

Spread creamy mushroom sauce on top.

  15. STEP 15

    STEP 15

Sprinkle everything with grated cheese. Place the julienne in an oven preheated to 200°C for 5-7 minutes until the cheese melts or a little longer until the cheese gets a golden brown crust.

  16. STEP 16

    STEP 16

Serve the shrimp julienne immediately. Bon appetit!

The julienne turned out very tasty! The main thing is not to overcook the flour.
