  1. STEP 1

    STEP 1

How to make juicy minced rabbit cutlets? Prepare your food. I used ready-made chilled minced meat from a supplier I trust. But if you prepare the minced meat yourself, I recommend passing the rabbit meat through a fine-hole meat grinder twice. This way, future cutlets will be airy, with a more mousse-like texture.

  2. STEP 2

    STEP 2

Pour milk into the bowl with the minced meat (the fattier it is, the more tender the cutlets will be in the end). You can replace milk with 10% fat cream. Add breadcrumbs. Use store-bought or homemade crackers; the latter will taste better.

  3. STEP 3

    STEP 3

Wash the eggs and beat them into a bowl with the minced meat. Add dried herbs. I use basil, marjoram and rosemary. You can put your own set or not use herbs at all. Add salt to taste. If you wish, you can add more pepper to the minced meat. Mix all ingredients thoroughly. To speed up the process, you can use an immersion blender.

  4. STEP 4

    STEP 4

Melt the butter in any convenient way. Personally, I find it more convenient to heat the butter in a small saucepan over low heat. But you can do this in a microwave oven or in a water bath. Pour the cooled oil into the minced meat and mix everything again.

  5. STEP 5

    STEP 5

Using a tablespoon, scoop the minced meat into equal-sized patties. Grease a baking sheet with butter and place the cutlets on it. Bake them in an oven preheated to 200 degrees for half an hour. Instead of baking, you can fry the cutlets in a hot frying pan in vegetable oil for five minutes on each side. Serve the cutlets with mashed potatoes or boiled pasta and always with a salad of fresh vegetables. Bon appetit!

Once I was cutting up a rabbit for stewing and decided to cut off more of the flesh into cutlets. To be honest, I’ve never tried rabbit cutlets) I got 650g, I froze the meat, but now it’s useful to me) After reading the recipe, at first I thought that the minced meat would be too liquid. But after kneading, it became clear that the minced meat turned out to be very dense and molded perfectly into cutlets, I didn’t even wet my hands. I took bought crackers, but they were fresh, they still smelled like bread. From this quantity I got 15 cutlets. Bake at 200° for 35 minutes. Both the children and I liked the cutlets; everyone happily ate them with pasta for dinner. The cutlets look and taste like chicken breast, only juicier. I understood why you need to add butter; with it, the finished cutlets became juicy and tender, and acquired a creamy taste. I didn’t add any spices, just salt, so it turned out to be delicious diet cutlets. It's worth a try) Thanks for the recipe Juicy minced rabbit cutlets!
